うな構成であるから外部の空気とのしや断又は容
器内の空気の脱気等には何等の考慮もされてはい
ない。

ール類が蒸気圧の低下により蒸発が促進されて
密閉容器内にエタノール類の蒸気が充満され
る。しかして漬物の水分の存在に依つてエタノ
ール類による静菌、殺菌作用が生じるから乳酸
菌の増殖を或程度コントロールすることが出
来、乳酸の発生を抑制するから漬物の強い酸味
所謂漬かり過ぎを防止出来る。

する逆止弁を設け、更に前記容器本体内に少量の
蒸留酒又はエタノール類を含ませた含浸物、もし
くは蒸留酒又はエタノールをその侭入れた小容器
を併存しうる如くし、又容器本体に挿入し得る押
え板及び錘を具備してなる減圧密閉漬物器によつ
て達成される。

小さくなつており従つて軸自体は開口8内で遊動
自在であり、その際傘の周縁先端面4cは蓋1の

物の酸化即ち漬かり過ぎを防止するため漬物の塩
分を最少にへらすことが出来て、健康上も食味上
も非常に好ましい。
