It is used as a fat for chocolate. Not only is the price low, but the melting point can be adjusted, and as chocolate products become more diverse, the amount used is increasing.

0.1 sucrose fatty acid ester with an HLB of 5 or less is added to a milk chocolate raw material formulation with a high milk content of 0.1 or more.
A method for producing milk chocolate by adding ~2.0% of milk is exemplified, and its purpose is to cancel out the spiciness caused by milk and to produce chocolate with good flavor and melt-in-the-mouth taste. The sucrose fatty acid ester used in this patent is defined as HLB
5 or less, and can have a bound fatty acid having 12 to 22 carbon atoms, but in the examples, as a sucrose fatty acid ester having an effective effect, the constituent fatty acids are 70% stearic acid and 30% nof lumitic acid. Only those that are % are illustrated.

We have discovered that chocolate can effectively prevent phantom plume.

。However, when a sucrose fatty acid ester containing lauric acid as a constituent fatty acid is used, it has the disadvantage that depending on the storage conditions of the chocolate, hydrolysis occurs and a soap odor caused by lauric acid is generated. The sucrose fatty acid ester of the present invention having myristic acid as a constituent fatty acid does not have such problems at all.
