[Detailed description of the invention] This invention relates to a forced circulation oven, and in particular, an oven inner box is provided with a space inside the oven body, and the inside of the inner box is made to have a negative pressure from the combustion chamber. The present invention relates to a forced circulation oven that heats the food evenly and prevents uneven cooking by causing hot air in the combustion chamber to flow into the interior from the periphery of the inner box.

Generally, this type of forced circulation oven has a combustion chamber with a gas burner installed below the heating chamber that heats the food, and the hot air obtained from the gas burner is blown into a ventilation chamber partitioned at the rear of the heating chamber. A fan draws air into the blowing chamber from the rear of the combustion chamber and sends it to the heating chamber to heat the food in the heating chamber.
A portion of the hot air is exhausted through the exhaust port, and the remainder is circulated back into the heating chamber.

In this way, in conventional ovens, the hot air inside the combustion chamber is sucked into the ventilation chamber from the rear of the combustion chamber.
Since it is being fed to the heating chamber, it is supplied to the heating chamber in a high temperature state. Therefore, there is a large difference in the amount of heat received by the food being cooked in the heating chamber between the side that is directly hit by the hot air and the back side, and the speed of the hot air is increased by the blower fan in the ventilation chamber, so that it does not reach the food. A phenomenon occurs in which the separation of the air layer surrounding the food is large on the contact surface, and becomes smaller on the back side. For this reason, the amount of heat received by the food to be cooked differs significantly between the side that is exposed to the hot air and the back side thereof, resulting in uneven cooking.

In addition, in the case of conventional forced circulation ovens,
Because the hot air drawn into the ventilation chamber is sent to the heating chamber and circulated, the pressure inside the heating chamber is higher than that in the combustion chamber. Therefore, in order to airtightly separate the combustion chamber and heating chamber from each other, prevent hot air from flowing back into the combustion chamber, and stabilize combustion in the burner, a combustion chamber is installed at the bottom of the heating chamber. It was necessary to partition. However, such a partition plate is extremely heated by the hot air in the combustion chamber, and as a result, radiant heat is emitted from the top surface of the partition plate into the heating chamber, and as a result, the amount of heat from below increases in the food to be cooked, causing uneven cooking. Furthermore, it is extremely difficult to clean juices and the like that scatter from the food and adhere to the inner surfaces of the heating chamber and the ventilation chamber because the walls of the heating chamber and the ventilation chamber form part of the oven body.

This invention eliminates the drawbacks of conventional forced circulation ovens, heats food efficiently, prevents uneven cooking, and improves cleaning efficiency. A detailed description will be given below with reference to the drawings. In the figure, 1 is a substantially square box-shaped oven main body with an open front surface,
The front is opened and closed by door 2. An exhaust port 3 is provided at the upper rear part of the oven body 1, a gas burner 4 is arranged at the lower part of the interior, and a motor chamber 6 partitioned by a rear inner wall 5 is formed at the rear part.
A shaft of a motor 7 disposed inside extends into the oven body 1 through the rear inner wall 5, and a blower fan 8
can be installed. A protective plate 9 is provided on the inner surface of the rear inner wall 5.
is removably polymerized to allow contaminants generated within the oven body 1 to adhere to the protective plate 9, making cleaning easier by removing the protective plate 9, and preventing the rear inner wall 6 integral with the oven body 1 from becoming dirty. This avoids the difficulty of cleaning.

Reference numeral 10 denotes an oven inner box body disposed in and out from the front of the oven body 1, which is formed in the shape of a rectangular cylinder with both front and rear sides open, and has dimensions slightly smaller than the internal dimensions of the oven body 1. A space surrounding the outer peripheral surface of the oven inner box 10 is formed between the oven inner box 10 and the inner surface of the oven main body 1. The rear part of the oven inner box body 10 is provided with a dividing plate 1.
1 is divided into two chambers, front and rear, with the front chamber serving as a heating chamber 12 for heating food, and the rear chamber serving as a blowing chamber 13 for receiving the blower fan 8.
Furthermore, by inserting the oven inner box 10 into the oven main body 1, a combustion chamber 14 in which the gas burner 4 is disposed below the bottom plate of the oven inner box 10 is provided.
is defined, and the combustion chamber 14 communicates with the space between the oven inner box 10 and the oven main body 1 from both upper sides thereof.

When food placed on an oven tray 18 is inserted into the heating chamber 12, the blower fan 8 is rotated, and the gas burner 4 is ignited to start cooking, the air inside the heating chamber 12 is sucked by the blower fan 8. The pressure inside the ventilation chamber 13 rises, and a portion of the air is discharged outside the chamber through the exhaust port 3, so that the pressure inside the heating chamber 12 becomes a negative pressure with respect to the combustion chamber 14. As a result, air is sucked through the plurality of ventilation holes 15 opened in the heating chamber 12, and as the air is sucked into the heating chamber 12, air is sucked into the combustion chamber 14 from the air opening 21 at the bottom of the oven body 1. The gas is replenished and burned in the gas burner 4, mixed with gas and turned into high-temperature hot air, which enters the space around the oven inner box 10, wraps the oven inner box from the top, bottom, left and right, and heats it, passing through the ventilation holes 15. It flows into the heating chamber 12 through. Then, the food to be cooked is heated and enters the ventilation chamber 13 through the intake port 16. The pressure of the hot air is increased by the blower fan 8 in the blower chamber 13, returns to the heating chamber 12 again through the blower hole 17, and is circulated to heat the food to be cooked.
As a result, hot air corresponding to the amount of air required for combustion in the gas burner 4 described above is released outside the vessel.

In this way, according to this invention, the hot air that has entered the heating chamber 12 and heated the food is circulated between the heating chamber 12 and the ventilation chamber 13, and the inside of the heating chamber 12 is connected to the combustion chamber 1.
Since the pressure is more negative than 4, the hot air circulating through vent 1
There is no backflow from heating chamber 1.
There is no fear that the inside of the oven body 1 will be contaminated by contaminants generated inside the oven body 1. Further, the oven inner box 10, which is often dirty, can be pulled out of the oven main body 1 together with the protective plate 9 and cleaned easily.
In addition, the high-temperature hot air generated in the combustion chamber 14 wraps around the oven inner box 10 from all sides.
Since the hot air enters the heating chamber 12 through the ventilation hole 15 and heats the food, the hot air used to heat the food becomes slightly cooler and exits from the heated oven inner box 10. Since the radiant heat heats the food from all sides, uniform heating within the oven inner box 10 is improved, and uneven cooking can be better prevented.

Furthermore, since the inside of the heating chamber 12 is under negative pressure with respect to the combustion chamber 14, and the combustion exhaust gas inside the heating chamber 12 is exhausted from the ventilation chamber 13 through the exhaust port, combustion pollutants inside the heating chamber 12 are removed. There is no risk of entering the oven body 1 from the heating chamber 12 and contaminating the oven body 1. And inside the contaminated heating chamber 12,
It can be easily cleaned by taking out the oven inner box 10 in which it is formed.
