For example, as shown in FIG. 8, the surface of an ice cream or popsicle 1 is coated with a chocolate layer 2, or as shown in FIG. 9, a chocolate plate 2a is held inside the ice cream 1. I can give you things. In addition, in FIG. 8, 1a is a stick. However, when the frozen dessert coated with the chocolate layer 2 is eaten, the chocolate layer 2 stains the area around the mouth or the chocolate layer 2 peels off and falls off, making it difficult to eat. Also, when you take a bite, the outer chocolate layer 2 goes into the daylight hours first, so when you start eating, you mainly eat chocolate, and towards the end you have no choice but to eat only ice cream or popsicle 1. There is an unbalance in that there is no benefit. Also, in the case where the chocolate plate 2a is held inside the ice cream 1, contrary to the above case, at the beginning of eating, the ice cream 1 is mainly eaten, and towards the end, only the chocolate 2a is eaten. There is an unbalanced feeling that is unavoidable. Therefore, the rich sweetness of the chocolate 2a remains as an aftertaste, which impairs the cooling sensation typical of frozen desserts.

。Therefore, as shown in FIG. 10, a new type of frozen dessert has been proposed in which the outermost layer is a frozen dessert layer 12, and inside that a thin chocolate layer 13 and a frozen dessert layer 14 are formed in this order (1986). Patent application dated July 17th, application number 62-
179582). The above-mentioned application specification discloses that this frozen dessert can be manufactured as follows. That is,
First, a frozen dessert mix is filled into a mold immersed in a brine layer and semi-frozen, and then the unfrozen portion is removed by suction to create the outermost layer, the frozen dessert layer 12. Next, chocolate liquid is injected inside the frozen dessert layer. It can be manufactured by making chocolate 8N13, and then filling the inside of this chocolate thin layer 13 with a frozen dessert mix to form a frozen dessert layer 14. Although not specified in the above application specification, it is also possible to form the thin chocolate layer 13 in the same manner as the outermost frozen dessert layer 12. That is, after filling with chocolate liquid, the thin chocolate layer 13 is formed by suctioning and removing the unhardened portion inside.

The method of removing chocolate liquid by suction has a problem in that it is difficult to control the temperature of the brine layer, which is a refrigerant, because the thickness of the chocolate layer is determined by the hardening state of the chocolate liquid.

A shell forming step in which a frozen dessert mix is filled into a mold immersed in a refrigerant, the outermost layer is frozen, and the unfrozen portion inside is removed by suction; a chocolate filling step in which the bottom inside the shell is filled with chocolate liquid; A thin chocolate layer forming step in which a frozen dessert mix having a higher specific gravity than the chocolate liquid is filled from above the chocolate liquid and the chocolate liquid rises along the inner wall of the shell and hardens; and a frozen dessert layer formation step in which the filled frozen dessert mix is frozen. The structure includes a process.

した。That is, the present inventors conducted a series of studies on a method for easily manufacturing frozen desserts containing a thin layer of chocolate using conventional frozen dessert manufacturing equipment. As a result, after forming a shell with a frozen dessert mix, if the inside bottom of the shell is filled with chocolate liquid, and then a frozen dessert mix with a higher specific gravity than the chocolate liquid is filled from above, the chocolate liquid will flow into the inner wall of the shell. This invention was achieved by discovering that the layer rises along the direction and becomes a thin layer.

before and after) 11, and the frozen dessert mix 12a is filled into the mold 10. And the above frozen dessert mix 12a
Once it is semi-frozen, the unfrozen portion is removed by suction. In this case, since the frozen dessert mix 12a is frozen from the mold 10 side, the above-mentioned suction forms a shell 12, which is a frozen dessert layer, along the mold IO, as shown in FIG. Next, a small amount of chocolate liquid 13a is filled inside the shell 12 so that the chocolate liquid 13a accumulates at the bottom of the shell 12, as shown in FIG. Then, before this chocolate liquid 13a hardens, a fourth
As shown in the figure, the frozen dessert mix 14a is filled from above. As a result, the chocolate liquid 13a rises up the inner wall of the shell 12 due to the reaction of the falling frozen dessert mix 14a, and is sandwiched between the inner wall of the shell 12 and the frozen dessert mix 14a, becomes a thin layer, and hardens. In this way, the chocolate thin layer 13 is formed in the state shown in FIG. In addition, when the frozen dessert mix 14a is at a semi-frozen stage, the stick 15 is inserted in the same way as in the past, and the frozen dessert mix 16 for forming the bottom portion is filled and frozen (FIG. 6) to form a so-called bar-type frozen dessert. Can be done.

As shown in FIG. 7, a type of frozen dessert in which thin chocolate layers 13 and frozen dessert layers (12, 14) are alternately laminated is obtained.

It needs to have a higher specific gravity than the That is,
Due to its greater specific gravity than the chocolate liquid 13a,
It has the effect of displacing the chocolate liquid 13a and falling, and causing the chocolate liquid 13a to rise. Incidentally, the specific gravity of the chocolate liquid 13 is usually about 1.09 to 1.10, and it is necessary to use a frozen dessert mix 14a that has a specific gravity higher than that of the chocolate liquid 13a.
