[製造例] 焼き菓子の製造
下記表1に記載の配合量で各原料を混合して生地を調製し、この生地を焼成して、実施例1~9、比較例1~10の焼き菓子を製造した。具体的な製造方法を以下に詳述する。

上記製造例で製造した焼き菓子について、それらの風味を下記評価基準に基づき評価した。評価は3人の専門パネルにより行った。各パネルの評価結果はすべて同じであった。

上記製造例において、焼成前の生地の物性(べとつき、つながり)を下記評価基準に基づき評価し、製造適性を調べた。評価は3人の専門パネルにより行った。各パネルの評価結果はすべて同じであった。

結果を下記表1及び2に示す。

上記の表1及び2に示される通り、焼き菓子中の糖アルコールの含有量を本発明で規定するよりも多くすると、風味は良化するが、焼き菓子の調製において生地のべとつきが強くなり、焼き菓子の調製における作業性に劣る結果となった(比較例1、8)。逆に、焼き菓子中の糖アルコールの含有量を本発明で規定するよりも少なくすると、不溶性食物繊維の含有量を本発明で規定する下限値としても風味に劣る結果となった(比較例4)。
また、焼き菓子中の不溶性食物繊維の含有量を本発明で規定するよりも多くすると、糖アルコールを含有させても生地のつながりを改善することができず(比較例5、6)、逆に、焼き菓子中の不溶性食物繊維の含有量を本発明で規定するよりも少なくした場合には、焼き菓子の調製において生地がべとつきやすく、作業性に劣る結果となった(比較例2、3)。
また比較例7の結果から、本発明の効果の発現には不溶性食物繊維の含有量に対する糖アルコールの含有量の比の値も重要であることがわかる。すなわち、不溶性食物繊維と糖アルコールを所望量含有する形態であっても、不溶性食物繊維の含有量に対する前記糖アルコールの含有量の比の値が本発明で規定するよりも小さいと、風味に劣る焼き菓子となり、また焼き菓子の調製における生地のつながりにも劣る結果となる。
また、糖アルコールに代えて上白糖を用いると、風味は良化するが、焼き菓子の調製における生地のつながりが悪く成型性に劣る結果となり(比較例9)、また、糖アルコールに代えて水飴を用いた場合には、風味の改善効果が認められなかった(比較例10)。
これに対し、不溶性食物繊維と糖アルコールとを本発明で規定する量で含有する実施例1~9の焼き菓子は、いずれも風味が良好で、また、焼き菓子の調製の際、焼成前の生地のべとつきが抑えられて作業性に優れ、また生地のつながりも良好で成型性にも優れるものであった。

Further, if the content of the insoluble dietary fiber in the baked confectionery is higher than specified in the present invention, the connection of the dough cannot be improved even if the sugar alcohol is contained (Comparative Examples 5 and 6), and conversely. When the content of insoluble dietary fiber in the baked confectionery was lower than specified in the present invention, the dough was easily sticky in the preparation of the baked confectionery, resulting in poor workability (Comparative Examples 2 and 3). ..
Further, from the results of Comparative Example 7, it can be seen that the value of the ratio of the content of sugar alcohol to the content of insoluble dietary fiber is also important for the manifestation of the effect of the present invention. That is, even in the form containing a desired amount of insoluble dietary fiber and sugar alcohol, if the value of the ratio of the content of the sugar alcohol to the content of the insoluble dietary fiber is smaller than specified in the present invention, the flavor is inferior. The result is a baked confectionery and the connection of the dough in the preparation of the baked confectionery is inferior.
Further, when white sugar is used instead of sugar alcohol, the flavor is improved, but the connection of the dough in the preparation of baked confectionery is poor and the moldability is inferior (Comparative Example 9), and starch syrup is used instead of sugar alcohol. When was used, no effect of improving the flavor was observed (Comparative Example 10).
On the other hand, the baked confectioneries of Examples 1 to 9 containing insoluble dietary fiber and sugar alcohol in the amounts specified in the present invention have good flavors, and when preparing the baked confectionery, before baking. 前記糖アルコールが、還元水飴(商品名:スイートNT、物産フードサイエンス社製)の成分組成の還元水飴、ソルビトール、及びマルチトールから選ばれる1種又は2種以上である、焼き菓子。
