実施例4における評価は表2に示すとおり、実施例3と実質的に変わらなかった。

参考例1における評価は表2に示すとおりであるが、その食感は硬く、弾粘性が不足し、滑らかさに関しては麺の表面に凹凸があり、滑らかさに欠け、いずれも実施例4より劣っており、改善すべきものである。
