Description

The present invention relates to a vacuum packaging apparatus for processed fish foods represented by kamaboko.

The vacuum packaging equipment for processed fish foods receives the processed fish food flowing on the transport line at a predetermined location, wraps the processed fish food with a soft resin film, and evacuates the air inside the film. The processed processed fish meat food was packaged.

The vacuum packaging apparatus as described above undergoes a process of wrapping processed fish meat food with a film and extracting air from the bag. Therefore, if the processed fish food has a rectangular shape composed of corners and flat surfaces, it can be packaged with a good appearance and a beautiful film. However, in the case of a semicircular arc shape with the entire outer periphery or a part round like a kamaboko, an irregular tension is applied to the film when it is wrapped with a film and vacuum-packed. As shown in FIG. 5 (b), the film is packaged with a ridge 20 formed thereon. Because of this, it is not possible to clearly display labels indicating information such as product names and production dates affixed to the film, resulting in a decrease in discriminability when placed on the storefront and a poor appearance. There was a product image problem.

This invention is made | formed in view of the said subject, and is providing the vacuum packaging apparatus of the processed fish meat food which can give a favorable aesthetics and clear merchandise discrimination without making a wrinkle on a film.

Invention of Claim 1 among this invention is a vacuum packaging apparatus of the processed fish meat food after cooking which the outer peripheral part represented by the kamaboko etc. is provided with the shape which was rounded, Comprising: Food conveying part, , A packaging unit, a deaeration unit, and a water supply unit, the food conveyance unit conveys the processed fish food after the food processing process to each subsequent process, and the packaging unit conveys the food The outer periphery of the processed fish meat food is wrapped with a film, the deaeration part is used to deaerate the inside of the package with the film wrapped with processed fish meat, and the water supply part is placed in the packaging part. Water is supplied to cover the outer periphery of the processed fish meat before being transported, and a lubrication layer is formed between the processed fish meat that has been vacuum-packed in the deaeration section and the film.

The invention according to claim 2 of the present invention is characterized in that the water supply portion thinly applies moisture to the entire outer peripheral portion of the processed fish meat food.

According to claim 1 of the present invention, moisture is applied between the processed fish food and the film by coating, for example, distilled water or ethanol as water on the surface of the processed fish food from the water supply unit before the vacuum packaging. Are arranged thinly and form a lubricating layer. Then, the lubricating layer comes into close contact with the surface of the processed fish food with the surface tension on the inner peripheral side of the film, and the occurrence of wrinkles on the film when vacuum packaging is eliminated. Accordingly, the product name, date of manufacture, and label indicating the expiration date that are affixed to the film can be clearly displayed, and the aesthetics of the products arranged in the store after manufacture can be improved.

According to invention of Claim 2 of this invention, with respect to the fish processed food before a stage conveyed to a packaging part, by applying a thin water | moisture content thinly to the whole outer peripheral part, It becomes easy to form a lubricating layer having a substantially uniform thickness between the film and the film.

Below, the vacuum packaging apparatus of the fish meat processed food by this implementation is demonstrated based on drawing.
Here, kamaboko (fish meat processed food) 9 is cited as the fish processed food to be packaged by the vacuum packaging apparatus according to the present embodiment. The above-described kamaboko 9 is formed by winding a flattened fish meat like a vortex, and its cross section has a horizontally long elliptical shape.
First, the kamaboko 9 forming procedure will be briefly described with reference to an overall process diagram from a processed fish meat food process to a vacuum packaging process as shown in FIG. The raw materials for kamaboko 9 include fishes such as flying fish, sea bream, sea bream, hokkake, migisu, and other imported fish such as walleye pollock, minamidara, kintokidai, oysterfish, hoki guchi, and hake. Then, frozen products made from these fish are processed to form kamaboko 9 of various types and shapes. After the above frozen product is thawed, it is subjected to a crusher to become a food material having a viscosity, and this food material is placed on a skin that is separately formed into a sheet. Furthermore, after the food raw material placed on the above skin is wound in a spiral shape with a winder while maintaining a state in which the softness remains, the food raw material is extended until the cross section has a predetermined diameter. And the processing material formed in the laver winding shape is cut | disconnected sequentially by the length close | similar to the preset final product, and also it heat-cookes with a shaping | molding roasting machine. After finally cooling, it is transported to the vacuum packaging apparatus for processed fish meat food according to the present implementation.

The fish packaging food vacuum packaging apparatus according to the present embodiment includes a food conveyance unit 1, a water supply unit 2, a packaging unit 3, and a deaeration unit 4, as shown in FIG. Further, as shown in FIG. 1 (b), the above vacuum packaging apparatus conveys the processed fish meat 9 in order by the water supply unit 2, the packaging unit 3, the deaeration unit 4 and the food conveyance unit 1. Further, the water supply unit 2, the packaging unit 3, and the deaeration unit 4 described above are all disposed along the food transport unit 1. Furthermore, a cooling means for cooling the kamaboko 9 heated during the molding process to a predetermined temperature is provided in the previous stage of the vacuum packaging apparatus according to the present embodiment. As the cooling means, a pool in which water is stored is used, and the kamaboko 9 conveyed by a conveyor or the like is immersed in the pool in which water is stored and cooled.

The food conveyance part 1 is comprised from the groove | channel 6 which has the groove width of the grade which the kamaboko 9 is lightly pinched, and the roller 7 arrange | positioned along the longitudinal direction of the both sides of the groove | channel 6 like FIG. is there. And by rotating each roller 7, the kamaboko 9 which contacts the roller 7 is sent out sequentially along the longitudinal direction of the groove | channel 6, and is conveyed to the water supply part 2 which is the next process. Moreover, the food conveyance part 1 is arrange | positioned all between the food processing process between the water supply part 2, between the water supply part 2 and the packaging part 3, and between the packaging part 3 and the deaeration part 4. Thereby, the processed fish meat processed in each part of the water supply unit 2, the packaging unit 3 and the deaeration unit 4 is transported to the next processing step.

As shown in FIG. 3, the packaging unit 3 wraps the kamaboko 9 transported by the food transport unit 1 with the film 8 and further wraps the fish processed food with the film 8 in a bag shape. The kamaboko 9 is wrapped in a bag shape with the film 8, the mouth of the bag of the film 8 is left open, and is conveyed from the food conveyance unit 1 communicating with the packaging unit 3 to the next deaeration unit 4. When the kamaboko 9 is wrapped with the film 8, the film 8 fed out from the film roll is fed out, and the feeding arm 17 guides the feeding direction of the film 8 and extends it to the packaging adapter 18. Next, the packaging adapter 18 covers the kamaboko 9 conveyed along the groove 6 of the food conveying unit 1 from above, and further covers the three sides of the film 8 that wraps the kamaboko 9 as a target with the packaging adapter 18. Is formed into a bag shape that wraps the kamaboko 9.

As shown in FIG. 4, the deaeration unit 4 includes a plurality of fish meat processed food storage units 10 arranged along the conveyance direction of the food conveyance unit 1. Each accommodating portion 10 is covered with a lid 12 that communicates with the intake passage 11. And in each accommodating part 10, the kamaboko 9 wrapped in the bag-shaped film 8 conveyed by the food conveyance part 1 is mounted, and also the accommodating part 10 is covered with the lid | cover 12 by covering each accommodating part 10. FIG. The inside of is sealed. Further, the air in the bag of the film 8 is evacuated from the air intake passage 11 in the housing space of the housing portion 10 sealed by the lid 12, so that the bag of the film 8 is in a vacuum state. Furthermore, by closing the open side of the bag of the film 8, the kamaboko 9 enclosed in the film 8 in a vacuum state is packaged. Here, the kamaboko 9 that has been vacuum-packed is sequentially conveyed again from the food conveying unit 1 to the next process.

The water supply part 2 is installed before the packaging part 3 of the food conveyance part 1 like FIG. Moreover, the water supply part 2 by this implementation is provided with the water storage tank 13, the spray nozzle 14, and the control part 15, and the said water storage tank 13 has stored distilled water or ethanol. Further, the spray nozzle 14 can freely adjust the spray amount from the nozzle and the spray interval, and the control unit 15 adjusts the spray amount and the spray interval. Moreover, the control part 15 has the operation panel 15a which an operator operates, and the operation panel 15a can adjust the spray water quantity per time with respect to one fish meat processed food, and the time interval of the spray. it can. And when the kamaboko 9 is conveyed on the food conveyance part 1, the sensor provided in the water supply part 2 detects, and the distilled water or ethanol stored in the water storage tank 13 is atomized from the spray nozzle 14. A predetermined amount is sprayed. At this time, the sprayed distilled water or ethanol sprays on substantially the entire outer peripheral portion of the kamaboko 9, and a lubricating layer of distilled water or ethanol is formed on the entire outer peripheral portion of the kamaboko 9. In this embodiment, the kamaboko 9 is set to be sprayed with 0.1 to 2.0 ml of water or ethanol. Furthermore, the sprayed distilled water or ethanol is adhered to the entire surface of the kamaboko 9 in a thin and uniform manner, so that the bag-like film 8 that gradually becomes deflated by deaeration and the outer periphery of the kamaboko 9 are contacted. As shown in FIGS. 5A and 5C, the lubricating layer 16 made of distilled water or ethanol interposes the film 8 almost uniformly without forming water bubbles. If the lubricating layer 16 is not interposed as in the conventional case, wrinkles 20 are generated in the film 8 as shown in FIG.

In the vacuum packaging apparatus for processed fish food according to the present embodiment, a lubricating layer 16 of water or ethanol is formed between the outer periphery of the target processed fish meat (kamaboko in this embodiment) 9 and the film 8 covering the outer periphery. As a result, the lubricating layer 16 follows the movement of the film 8 and the processed fish food 9. From this, even when the processed fish meat 9 is vacuum-packed, even if the processed fish meat 9 has a rounded outer peripheral portion that is difficult to apply tension to the film 8, FIG. 5 (b) (d) Thus, the film 8 has a structure that does not generate the wrinkles 20. Further, since the film 8 has a structure that does not generate the ridge 20 and the lubricating layer 16 is formed between the processed fish meat 9 and the film 8, the distribution path after the vacuum-processed processed fish meat 9 is manufactured. When the film 8 is transported or displayed at a storefront, the lubricating layer 16 is interposed between the processed food 9 and the film 8 even if the film 8 is displaced due to impact or contact with other products. It is possible to secure a good appearance without the wrinkles 20 coming close to the labels 19 and other printed display portions attached to the outer peripheral portion of the film 8.

The vacuum packaging apparatus for processed fish meat food of the present invention provides distilled water or processed fish food 9 to the processed fish food 9 in the stage before the film 8 packaging process. Any means capable of spraying ethanol may be manually controlled in addition to the means for automatically controlling the spray amount and spray time interval as in the above embodiment. Furthermore, the packaging unit 3 may have a different procedure for wrapping the film 8 depending on the size and shape of the processed fish meat product 9.
