Description

The present invention relates to a manufacturing method and apparatus for a food product such as a pie bun that includes an inner packaging material such as rice cake with a sheet-like outer skin material such as pie dough, and a stamper. Accordingly, the present invention relates to a method and an apparatus for manufacturing encapsulated food and a stamper that can fold a crease (fold) at a right angle when folding an outer covering material so as to wrap an inner packaging material.

For example, in the case of manufacturing food products such as pie buns, a sheet-like skin material such as pie dough is supplied onto a pallet that is intermittently transported downstream by a belt conveyor, and the above-mentioned skin material is, for example, 4 Cut into a square shape, and an inner packaging material such as a bag is supplied and placed on the outer skin material. And the foodstuffs are manufactured by folding the corner | angular part of the outer skin material after mounting an inner packaging material sequentially so that the said inner packaging material may be wrapped (for example, refer patent document 1).
Japanese Patent Publication No.8-8830

By the way, in the case where the inner packaging material placed on the quadrangular outer skin material is wrapped by sequentially bending the corner portions of the outer skin material, since the outer skin material is flexible, as described in Patent Document 1 It is necessary to provide on the pallet a sheet-like flexible mat made of resin that can be elastically deformed so that it can return to its original state. As described above, by providing the flexible mat on the pallet, the sheet-like outer covering material can be folded so as to wrap the inner packaging material via the flexible mat, and the inner covering material can be wrapped by the outer covering material.

However, by folding the outer shell material through the flexible mat, the fold of the outer shell material becomes a shape that follows the fold of the flexible mat. Further improvement is desired in order to finish the appearance more beautifully and aesthetically. Further, since the crease of the outer skin material becomes a relatively large arcuate curved surface, there is a problem that a gap is easily generated between the inner packaging material and the outer skin material in the portion.

It is characterized by having.

Further, in the encapsulated food manufacturing apparatus, the stamper includes a recess at a central portion of the lower surface of the mold base that is detachably attached to an elevating member that is moved up and down by an actuator. The folding part is provided with an inner projecting part for forming a folding groove, and an outer projecting part is provided outside the inner projecting part in parallel with the inner projecting part.

In the encapsulated food manufacturing apparatus, the inner projecting portion is formed in a continuous annular shape.

Further, the stamper used in the step (c) in the method for manufacturing the encapsulated food, wherein the stamper is recessed in a central portion of the lower surface of the mold base that is detachably attached to an elevating member that is moved up and down by an actuator. An inner protrusion for forming a folding groove in the folded portion of the outer skin material around the recess, and an outer protrusion in parallel with the inner protrusion on the outer side of the inner protrusion, The inner projecting portion is formed in a continuous annular shape.

According to the present invention, since the outer skin material is folded in the folding groove formed in advance, the fold when the outer skin material is folded so as to wrap the inner packaging material can be folded at a right angle, for example. The appearance is improved and the outer skin material is in close contact with the inner packaging material, which can solve the conventional problems as described above.

Referring to FIG. 1 and FIG. 2, an encapsulated food manufacturing apparatus 1 according to an embodiment of the present invention is a skin material supply means (a skin material supply device) for supplying a sheet-like long skin material 3. 5 is provided. The outer skin material supply means 5 has a function of rewinding and supplying the outer skin material 3 which is formed in a band shape in advance and is wound in advance so as to be rewound, to the downstream side. The trimming of the skin material 3 continuously fed downstream is performed on the upper surface of the cutter device 9 having three rotating cutters 7 for cutting the central portion in the width direction and the skin material 3. There is provided a powdering device 13 provided with a powdering brush 11 for removing the adhering hand powder so as to be movable in the width direction of the outer skin material 3.

Therefore, the outer skin material 3 supplied downstream from the outer skin material supply means 5 is trimmed on both side edges in the width direction and cut in the center in the width direction, as shown in region A of FIG. Thus, it is in a state of being divided into two equal parts in the width direction.

On the downstream side of the skin material supply means 5, there is provided an endless transport chain 17 provided with a number of pallets 15 adjacent to each other for supporting the skin material 3 fed from the skin material supply means 5. The transport chain 17 has a function of transporting the pallet 15 downward at a pitch substantially equal to the width dimension of the pallet 15 by intermittently rotating a transport drive motor (not shown). In addition, as a configuration for intermittently feeding the pallet 15 by driving the conveyance drive motor intermittently, as described in Patent Document 1, timing is controlled by a configuration using a cam and a limit switch. It is also possible to adopt a configuration in which the driving of the conveying motor is controlled in accordance with a preset operation program under the control of a control device (sequencer) 19 that controls the overall operation of the manufacturing apparatus 1. Is.

The pallet 15 is provided long in a direction orthogonal to the conveying direction so as to correspond to the outer skin material 3 that is supplied by being cut in two rows. And the mounting area | region 15A (refer FIG. 4) which each mounts 2 rows of outer skin | cover materials 3 in the pallet 15 is comprised the same, The polygonal film member 21 is located in the center part of the above-mentioned mounting area | region 15A. The central part (see FIGS. 4 and 5) is fixed appropriately. The film member 21 is formed in a shape substantially equal to the outer shape of the outer skin material 3 immediately before starting to wrap the inner packaging material.

The film member 21 is made of a resin film that is hard to adhere to the outer skin material 3 and is elastically deformable so that it can return to its original state. It should be noted that when folding the outer skin material 3 through the film member 21, it corresponds to the folding groove formed in the outer skin material 3 in advance so that the film member 21 can be folded at a substantially right angle. It is desirable to previously form a folding groove at the folding position of the film member 21.

In the placement area 15A in the pallet 15, a plurality of vertically penetrating portions 23 such as a plurality of long holes or slits (notches) that are long in the radial direction from the center of the placement area 15A are formed. The upper and lower penetrating portions 23 are placed on the placement region 15A of the pallet 15 and wrap the inner packaging material 25 with the outer shell material 3 having a predetermined shape in a state where the inner packaging material 25 is placed at the center. Furthermore, the folding action part in the folding means 27 when folding the outer skin material 3 is a penetration part for moving up and down.

The folding means 27 is provided at a lower position of the pallet 15 conveyed by the conveying chain 17, and the pallet 15 is conveyed and positioned above the folding means 27 and is in a stopped state. The upper and lower penetrating portions 23 of the pallet 15 are penetrated upward from below, and the outer skin material 3 is folded via the film member 21.

More specifically, the folding means 27 includes a vertical movement actuator 29 such as a small air cylinder, and the vertical movement actuator 29 includes a lifting rod 31 such as a piston rod. The elevating rod 31 functions to bend (fold) the film member 21 and the outer skin material 3 in a horizontal state on the pallet 15 vertically along the outer peripheral edge of the inner packaging material 25.

An L-shaped folding swinging piece 33 is pivotally attached to the tip of the lifting rod 31 so as to be swingable (rotatable) in the vertical direction. The swinging piece 33 swings up and down. For this purpose, the lifting rod 31 is provided with an appropriate actuator 35 such as a cylinder. Therefore, as described above, the lift rod 31 is raised and the film member 21 and the outer skin material 3 are bent vertically, and then the actuator 35 is operated to rotate the swinging piece 33 upward. The upper end side of the film member 21 and the outer skin material 3 in a folded state can be folded horizontally so as to overlap the upper surface of the inner packaging material 25. Thereafter, when the folding means 27 is returned to the original state, the film member 21 is returned to the original horizontal state by elasticity.

In addition, as a structure of the said folding means 27, the structure of the folding means described in patent document 1 can also be employ | adopted, for example, without being restricted to a structure as mentioned above. That is, various configurations can be adopted as the folding means.

On the downstream side of the skin material supply means 5, the inner packaging material 25 such as a bag is placed on the two rows of the skin material 3 placed and transported on the pallet 15, as shown in a region B of FIG. 3. Inner packaging material supply means 37 is provided. This type of inner packaging material supply means 37 has the same configuration as the inner packaging material supply means for supplying the inner packaging material during, for example, the middle, and is well known, so the details of the inner packaging material supply means 37 will be described. Omitted.

In order to form a folding groove 39 (see FIG. 3) on the downstream side of the inner packaging material supply means 37 in a folded portion when the outer skin material 3 is folded so as to wrap the inner packaging material 25 with the outer skin material 3. The stampers 41 are provided in two rows. The stamper 41 includes a vertical movement actuator 43 such as an air cylinder provided at an appropriate position of the manufacturing apparatus 1. On the lower surface of the elevating member 45 (see FIG. 6) moved up and down by the vertical movement actuator 43. The mold base 47 is detachably attached by a fixture (not shown) such as a mounting bolt.

A concave portion 49 such as a hole or a hollow having an outer shape slightly larger than the outer shape of the inner packaging material 25 on the outer covering material 3 is provided at the center of the lower surface of the mold base 47. An inner projecting portion 51 for forming a folding groove 39 in the folded portion of the outer skin material 3 is formed in a continuous annular shape projecting downward. In addition, the said inner side protrusion part 51 does not necessarily need to be continuous, For example, it is also possible to set it as the structure which fractured | ruptured like a broken line. However, when the recess 49 is polygonal, the inner protrusion 51 corresponding to the corner of the recess 49 may be continuous with the inner protrusion 51 on the adjacent side, as shown in FIG. desirable. In other words, the corners of the inner protrusion 51 are continuous without breaking.

Further, the lower surface of the mold base 47 is provided with an outer protrusion 53 having substantially the same protrusion height in parallel with each side portion of the polygonal inner protrusion 51. The gap between the inner projecting portion 51 and the outer projecting portion 53 is set substantially equal to the thickness (height) dimension of the inner packaging material 25 on the outer skin material 3.

With the above configuration, when the outer skin material 3 on which the inner packaging material 25 is placed by the inner packaging material supply means 37 is intermittently transported to the lower position of the stamper 41 and stopped and positioned, the vertical movement actuator 43 in the stamper 41 is provided. Is driven, and the mold base 47 is lowered and pressed against the upper surface of the outer skin material 3. At this time, since the inner packaging material 25 on the outer skin material 3 relatively enters the recess 49 of the mold base 47, the inner packaging material 25 and the mold base 47 do not interfere with each other. Therefore, as shown in a region C in FIG. 3, an inner groove 39 for folding the outer skin material 3 is formed around the inner packaging material 25 on the outer skin material 3 by the inner protrusion 51 in the mold base 47. In addition, the outer protrusions 53 form the outer grooves 39 for folding.

On the downstream side of the stamper 41, a cutting machine 57 including a cutter 55 that is movable in a horizontal direction orthogonal to the conveying direction of the outer covering material 3 by the conveying chain 17 is provided. 3, the cutter 55 is a polygon having a size that wraps the inner packaging material 25 from the long state at the joint position of the pallet 15 conveyed by the conveying chain 17 as shown in a region D of FIG. It has the function of cutting and separating. In other words, the width dimension (dimension in the transport direction) of the outer skin material 3 after being cut and separated by the cutter 55 is substantially equal to the width dimension of the pallet 15.

Incidentally, the positional relationship between the stamper 41 and the cutting machine 57 can be reversed. However, when the folding groove 39 is formed on the upper surface of the outer skin material 3 by the stamper 41, the outer skin material 3 may move slightly due to the adhesion between the stamper 41 and the outer skin material 3. In order to achieve stability, it is desirable that the folding groove 39 is formed on the upper surface of the outer skin material 3 by the stamper 41 when it is in a long state without being cut and separated.

The longitudinal direction of the folding groove 39 formed on the upper surface of the outer skin material 3 by the stamper 41 is a direction orthogonal to the longitudinal direction (radial direction) of the upper and lower through-holes 23 in the pallet 15. In other words, the stamper 41 forms the folding groove 39 on the upper surface of the outer skin material 3 in a direction orthogonal to the longitudinal direction of the upper and lower penetrating portions 23 provided in the pallet 15.

On the downstream side of the cutting machine 57, in order to adhere the overlapping portion when the outer skin material 3 is folded, there is provided moisture applying means 59 for applying moisture to the vicinity of the angles of a plurality of locations where the outer skin material 3 should be adhered. Is provided. More specifically, the moisture applying means 59 includes a plurality of dropping nozzles 61 for dropping water droplets in the vicinity of each corner of the outer skin material 3 cut and separated into polygons (quadrangles). It is provided corresponding to the corner.

Therefore, when the outer skin material 3 cut and separated by the cutting machine 57 is positioned below the moisture applying means 59, positions corresponding to the corners of the outer skin material 3 as shown in the region E of FIG. In addition, the water droplet 63 is dropped.

On the downstream side of the moisture applying means 59, as shown in regions F and G of FIG. 3, the folding means 27 (not shown in FIGS. 1 and 2) for alternately folding opposite corners of the outer skin material 3 is shown. Is omitted). The folding means 27 is disposed so as to be opposed to each other by a transfer distance at which the pallet 15 is intermittently transferred so that the other corner is folded after folding the opposite corner of the outer covering material 3. It is.

By the way, as described above, the elevating rod 31 in the folding means 27 protrudes upward from the vertical penetrating portion 23 of the pallet 15 and the swing piece 33 is rotated upward, so that the film member 21 on the pallet 15 is moved. When the outer skin material 3 is folded, the outer skin material 3 is preliminarily formed with a folding groove 39. Therefore, the outer skin material 3 can be folded (folded) at a substantially right angle at the groove 39. The inner packaging material 25 and the outer skin material 3 can be brought into close contact with each other by preventing the bulging of the bent portion. That is, the inner packaging material 25 can be wrapped with the outer skin material 3 without generating a gap between the outer skin material 3 and the inner packaging material 25.

As described above, when folded so that the opposite corner portions of the outer skin material 3 overlap each other, the water droplet 63 is dripped near the corner portion of the outer skin material 3 and the adhesiveness is improved. When folded, the opposing corners of the outer skin material 3 are well adhered.

As described above, after folding the opposing corner portions of the outer skin material 3 so as to overlap each other (after the regions F and G in FIG. 3), the side portions on both sides of the overlapping corner portions of the outer skin material 3 are In order to adhere to the inner packaging material 25, the outer skin material 3 on the side of the inner packaging material 25 that is not wrapped is pressed along the outer side of the inner packaging material 25 that is not wrapped, as shown in a region H in FIG. Further, a crease trimming means 65 for trimming the crease is provided. The crease trimming means 65 is configured such that the outer covering material 3 on the side where the inner covering material 25 is not wrapped is attached to the lower portion of an elevating member 67 moved up and down by an actuator for vertical movement such as an air cylinder (not shown). A pair of pressing pads 69 that press downward on a position close to the inner packaging material 25 along the length of the inner packaging material 25 so as to correspond to the inner packaging material 25 is adjustable.

Therefore, when one opposing corner portion of the outer skin material 3 is folded and overlapped so as to wrap the inner packaging material 25, as a next step, the inner packaging material 25 is wrapped by the pair of pressing pads 69 in the crease trimming means 65. As shown in the region H in FIG. 3, the fold on the side that is folded next to the outer skin material 3 is arranged by pressing the outer skin material 3 on the side that is not.

On the downstream side of the crease trimming means 65, as shown in regions I and J of FIG. 3, folding means 27 (see FIG. 3) for folding the other opposing corner of the outer skin material 3 so as to wrap the inner packaging material 25. 5 (not shown in FIGS. 1 to 3). This folding means 27 differs only in the directionality from the folding means 27 for folding one opposing corner of the outer skin material 3 and has the same configuration. In addition, the effect at the time of folding the other opposing corner | angular part of the outer covering material 3 is the same as the case where the one opposing corner | angular part is folded.

As described above, as shown in the region J of FIG. 3, the food to be encapsulated is formed by sequentially folding one opposing corner of the outer skin material 3 and sequentially folding the other opposite corner to wrap the inner packaging material 25. 71 is obtained. The obtained encapsulated food 71 is lightly pressed on the upper surface by the pressing means 73 provided for the final process. The pressing means 73 includes a pressing pad 75 that is moved up and down by an actuator such as an air cylinder. Therefore, the upper surface of the food 71 can be lightly pressed by the pressing pad 75, and the adhesion of each corner of the outer skin material 3 can be further ensured.

As will be understood from the above description, when the inner packaging material 25 is placed on the polygonal sheet-shaped outer skin material 3 and then the corners of the outer skin material 3 are sequentially folded so as to wrap the inner packaging material 25, Since the folding groove 39 is formed in the material 3 in advance, the outer skin material 3 can be bent at a substantially right angle at the folding groove 39. Accordingly, the outer skin material 3 and the inner packaging material 25 can be brought into close contact with each other at the bent portion of the outer skin material 3, and a gap can be prevented from being generated between the inner packaging material 25 and the outer skin material 3. Further, since the cut and bent portions (folded portions, folds) of the outer skin material 3 are at right angles, the appearance of the encapsulated food 71 can be finished more beautifully and aesthetically, which eliminates the conventional problems as described above. It is something that can be done.
