In such a fryer, heat cooking cannot be performed while filtering is being performed due to the configuration in which the oil in the oil tank is once transferred to the tank. However, since the number of fast food restaurants open 24 hours has increased in recent years, the interruption of cooking by filtering is not welcomed.
On the other hand, since the tank is installed at a lower position below the oil tank, it is difficult to replace the filter and clean the tank, which imposes a burden on the operator.

SUMMARY OF THE INVENTION An object of the present invention is to provide a flyer that can execute filtering without interrupting cooking, and that facilitates filter replacement and improves workability.

In order to achieve the above object, the invention described in claim 1 is characterized in that a filtering device is formed between a tank opened to the atmosphere and provided with a filter inside, and an oil tank. It is composed of a circulation path that can reciprocate through a filter in the tank, and a pump that circulates oil in the circulation path . The tank is installed at the same height as the oil tank, and has a lid that can be opened and closed on the upper surface. It is a box, and the filter is accommodated in the tank so that it can be inserted and removed in the vertical direction. The tank is divided into an inlet chamber connected to the upstream side of the circulation path and an outlet chamber connected to the downstream side. Furthermore, the connecting portion of the circulation path with the inlet chamber is raised to a position above the combustion heating means in the inlet chamber through the bottom surface of the tank .
According to a second aspect of the present invention, in the configuration of the first aspect, a pair of left and right oil tanks are provided and connected in parallel in the circulation path, the tank is disposed between the left and right oil tanks, and oil is circulated in the circulation path. A valve for selecting an oil tank to be operated is provided.
In order to reduce the frequency of cleaning in the tank and replacement of the filter in the configuration of claim 1 or 2 , the invention according to claim 3 is provided with a pre-filter on the upstream side of the tank in the circulation path. It is a feature.

According to the first aspect of the present invention, filtering can be executed even during cooking, and it is possible to suitably cope with operation for 24 hours. In addition, since the oil is always in a beautiful state, less oil residue or the like is attached to the cooked food, and the quality of cooking is improved. Furthermore, if the pump is stopped, it is possible to replace the filter and clean the tank even during cooking.
And since the tank with a large capacity | capacitance conventionally becomes unnecessary, a tank becomes small and lightweight, and also leads to a cost reduction. Further, since the lower part of the fryer is not occupied by the tank, cleaning or the like below the oil tank is facilitated.
In addition, since the pump can always be operated for filtering, the capacity of the pump is sufficient, and the life is longer than that of intermittent operation several times a day.
In addition, an oil level sensor such as an oil level sensor or a float can be easily installed in the tank. In particular, the risk of malfunction due to adhesion of bubbles, solidified oil, etc. generated during cooking as in the case of installing in an oil tank is reduced, and the reliability associated with oil level detection is increased.
Furthermore , by installing the tank at the same height as the oil tank, it is possible to easily replace the filter with a comfortable posture.
Furthermore , it becomes easy to put in and out the filter in the tank, and it becomes convenient by replacement or the like.
In addition, the oil level does not fall below the combustion heating means on the oil tank side, and air blowing in the oil tank can be prevented.
According to the second aspect of the invention, in addition to the effect of the first aspect , the tanks can be installed in a space-saving manner between the oil tanks, and any one of the oil tanks can be easily filtered.
According to the third aspect of the invention, in addition to the effect of the first or second aspect , the use of a pre-filter removes coarse fried debris and the like in advance, so cleaning in the tank, replacement of the filter, etc. Is less frequent.

Further, on the front side upper portion of the housing 2, there are provided operation buttons, a display unit, etc., and fly controllers 16 and 16 for setting the cooking mode, the heat retention mode, the cooking temperature, etc. and instructing the burner controller 14 to input, respectively. Yes.

A filtering device 20 is provided in the center of the housing 2. The filtering device 20 includes a tank 21 installed between the left and right oil tanks 3, 3, a circulation path 22 formed between the tank 21 and the oil tanks 3, 3, and a pump 23 provided in the circulation path 22. And is formed by. FIG. 3 is a side view showing only the filtering device 20, but because the tank 21 is in a position overlapping the oil tank 3, for convenience of explanation, the tank 21 is shifted to the front side of the oil tank 3 to connect the piping of the circulation path 22 to it. In addition, it is shown in a state where it is stretched long back and forth.

First, the tank 21 is a box having a small left and right width so as to fit in the space between the oil tanks 3 and 3 and a depth substantially equal to that of the oil tank 3, and the upper surface can be opened and closed by a lid 24 as shown in FIG. Yes. However, even in the closed state by the lid 24, the inside of the tank 21 is not airtight but is open to the atmosphere.
Further, the inside of the tank 21 is partitioned in the width direction into two of an inlet side chamber 26 and an outlet side chamber 27 by a sheet-like filter paper 25 serving as a filter. The filter paper 25 is positioned by a rectangular receiving frame 28 fixed to the inner surface of the tank 21 and a net-like presser frame 29, and a filter paper presser 30 is provided on the input side chamber 26 side of the presser frame 29. Is provided.

As shown in FIG. 5, the filter paper presser 30 is a frame body in which a pair of rollers 32 and 32 are installed between the upper and lower ends of the pair of band plates 31 and 31, and the upper center of the band plates 31 and 31. A handle 33 for taking in and out is connected between them. In a state in which the filter paper presser 30 is housed in the entrance side chamber 26, the inner roller 32 contacts the presser frame 29 and the outer roller 32 contacts the inner surface of the tank 21 to press the presser frame 29 toward the frame 28. It has become. As a result, the filter paper 25 is sandwiched between the receiving frame 28 and the holding frame 29. On the other hand, on the inner surface of the tank 21 on the outlet side chamber 27 side, beads 34, 34... Are provided so as to contact the filter paper 25 and secure a gap between the filter paper 25 and the tank 21 inner surface. An oil level sensor 35 detects the presence or absence of oil in the tank 21.

Next, the circulation path 22 is connected forward and downward from the lower end of each oil tank 3, and the oil drain pipes 36 and 36 having the first oil valve 37 and the tip of the oil drain pipes 36 and 36 toward the center in the left-right direction. The first connecting pipes 38, 38 disposed below, and a centrifuge 39 as a prefilter that is installed below the oil tanks 3, 3 and the left and right first connecting pipes 38, 38 are connected to the peripheral side; An L-shape that is connected to the center of the rear surface of the centrifuge 39 and has a vertical rising portion 41 that projects through the bottom surface of the tank 21 and protrudes upward in the inlet chamber 26 and includes a second oil valve 42. The second connection pipe 40, the L-shaped third connection pipe 43 connected between the outlet side chamber 27 of the tank 21 and the suction side of the pump 23, one end connected to the discharge side of the pump, and the other end Branch pipes 45, 45 which are bifurcated and connected to the back surfaces of the oil tanks 3, 3 respectively. It is formed from the fourth connecting pipe 44. made. Each branch pipe 45 of the fourth connection pipe 44 is also provided with a third oil valve 46. The centrifuge 39 is connected to an oil drain port 47 having an oil valve 48 that is manually opened and closed.

Here, the first lever 49 is connected to the drive shaft of the valve body of the first oil valve 37 provided in each of the left and right oil drain pipes 36 and protrudes forward below the air chamber 9. 49 allows the first oil valve 37 to be manually opened and closed. Similarly, the second lever 50 is connected to the drive shaft of the valve body of the third oil valve 46 provided in each branch pipe 45 via the link 51 below the air chamber 9. The third oil valve 46 can be manually opened and closed by operation.
On the other hand, in the tank 21, the rising portion 41 of the second connection pipe 40 is formed with a length that reaches the cooking region S (shown in FIG. 3) above the uppermost end of the pulse combustor 4 in the oil tank 3. ing. As a result, the oil level does not drop on the oil tank 3 side, which leads to prevention of airing in the oil tank 3. The oil level sensor 35 is provided at a position slightly above the rising portion 41.

In the fryer 1 configured as described above, when the oil tanks 3 and 3 are filled with oil while the first oil valve 37, the second oil valve 42, and the third oil valve 46 of the circulation path 22 are opened, Oil is also filled in the tank 21 and the circulation path 22. Here, since the tank 21 is open to the atmosphere at the same height as the oil tank 3, the oil level in the tank 21 is the same height as the oil level in the oil tank 3.

When the predetermined cooking mode is selected by the fly controller 16 and the operation switch is turned on in the state filled with oil in this way, the burner controller 14 rotates the fan 10 for a predetermined time to supply air, and then mixes in the combustion chamber 5. The pulse combustor 4 is operated by intermittently burning the gas. That is, the mixed gas is intermittently burned in the combustion chamber 5, the combustion exhaust is forcibly discharged by the pressure increase in the combustion chamber 5 accompanying the combustion, and the combustion chamber becomes negative pressure by the discharge of the combustion exhaust. The operation of inhaling the fuel gas and the combustion air is repeatedly performed in 5, and the oil is heated to the cooking temperature by the ON / OFF operation of the pulse combustor 4 to maintain the cooking temperature. Therefore, when the food material is put into the oil tank 3 through the basket, the food material is cooked by hot oil.

On the other hand, when the pump 23 is always operated in this state, the oil in the oil tanks 3 and 3 reaches the centrifuge 39 from the drain oil pipes 36 and 36 and the first connection pipes 38 and 38, and is then centrifuged and granulated. The coarse fried residue is separated and sent from the second connection pipe 40 to the inlet chamber 26 in the tank 21. Then, it passes through the filter paper 25, reaches the outlet chamber 27, is sucked into the pump 23 through the third connection pipe 43, is discharged to the fourth connection pipe 44, and returns to the oil tanks 3 and 3 again from the branch pipes 45 and 45. . As described above, the centrifugal separator 39 and the filter paper 25 are passed through the tank 21 to remove impurities such as fine fried residue mixed in the oil. Therefore, oil is always circulated in the circulation path 22 and filtered (filtered) during cooking.

When the filter paper 25 is exchanged after filtering, the pump 23 is stopped by a switch operation at the fly controller 16, the tank 24 is removed, the tank 21 is opened, and the filter paper presser 30 is used with the handle 33. And take out from the tank 21. Then, the filter paper 25 can be removed from between the receiving frame 28 and the holding frame 29 and replaced with a new one. Of course, the inside of the tank 21 can also be cleaned. When the replacement of the filter paper 25 is completed, the filter paper presser 30 is returned to the tank 21 again, the lid 24 is closed, and the pump 23 is operated. Then, the oil circulates in the circulation path 22 and filtering is performed again. This filtering can be performed simultaneously with the oil tanks 3 and 3, but when filtering is not performed in one of the oil tanks 3, the first and third oils are operated by operating the first and second levers 49 and 50 of the oil tank 3. If the valves 37 and 46 are closed, the oil is circulated only on the other oil tank 3 side.

When the pump 23 is stopped, the first and second levers 49 and 50 are operated to close the first and third oil valves 37 and 46 and the second oil valve 42 is closed. The fried residue and the like separated by opening the cap of the centrifuge 39 can be discharged.
Further, when the pump 23 is stopped and only the first oil valve 37 is opened by operating the first lever 49 and the oil valve 48 of the oil outlet 47 is opened, the oil in the oil tank 3 is drained. The oil can be discharged to the outside through 47 and oil can be exchanged.

As described above, according to the fryer 1 of the above embodiment, the filtering device 20 is formed between the tank 21 opened to the atmosphere and provided with the filter paper 25 inside, the oil tank 3 and the tank 21, By comprising a circulation path 22 in which oil can reciprocate through the filter paper 25 in the tank 21 and a pump 23 that circulates oil in the circulation path 22, filtering can be performed even during cooking, and operation for 24 hours is possible. It is also possible to cope with this. In addition, since the oil is always in a beautiful state, less oil residue or the like is attached to the cooked food, and the quality of cooking is improved. Furthermore, if the pump 23 is stopped, the filter paper 25 can be replaced and the tank 21 can be cleaned even during cooking.
Since a large capacity tank is not required as in the prior art, the tank 21 is small and lightweight, leading to cost reduction. Moreover, since the lower part of the fryer 1 is not occupied by the tank 21, cleaning of the lower part of the oil tank 3 etc. becomes easy.

In addition, since the pump 23 is always operated, the capacity of the pump 23 is sufficient, and the life is also longer than the intermittent operation several times a day.
In addition, an oil level sensor such as an oil level sensor 35 or a float can be easily installed in the tank 21. In particular, the risk of malfunction due to adhesion of bubbles, solidified oil, or the like generated during cooking as in the case of installing in the oil tank 3 is reduced, and the reliability of detecting the oil level is increased.

On the other hand, since the tank 21 is installed at the same height as the oil tank 3, the filter paper 25 can be easily exchanged in an easy posture.
The tank 21 is a box having a lid 24 that can be opened and closed on the upper surface, and the filter paper 25 is accommodated in the tank 21 so that it can be inserted and removed in the vertical direction. The tank 21 is connected to the upstream side of the circulation path 22. Since the sheet is partitioned into an inlet side chamber 26 and an outlet side chamber 27 connected to the downstream side, the filter paper 25 can be easily taken in and out of the tank 21 and can be easily replaced.
Further, a pair of left and right oil tanks 3 and 3 are provided and connected in parallel in the circulation path 22, and the tank 21 is disposed between the left and right oil tanks 3 and 3, and the oil tank 3 for circulating oil in the circulation path 22 is selected. By providing the oil valves 37 and 46 to perform, the tank 21 can be installed between the oil tanks 3 and 3 in a space-saving manner, and any one of the oil tanks 3 can be easily filtered.
Further, by providing the centrifuge 39 on the upstream side of the tank 21 in the circulation path 22, coarse fried chips etc. are removed in advance, and the frequency of cleaning the tank 21 and replacing the filter paper 25 is low. That's it.

In addition, the structure of a tank or a circulation path is not restricted to the said form. For example, it is possible to change the design of the tank, such as a lid that is not an attachable / detachable type, but an integral type with a hinge, or a presser frame and filter paper presser are integrated. It is also conceivable to connect the upstream piping to the inside of the filter and connect the downstream piping to the tank outside the filter. In addition to paper, cloth or wire mesh can be used. Needless to say, the tank is not limited to the thin rectangular box as described above, and the thickness in the left-right direction may be increased, or a rectangular column or a cylindrical box may be used.
Also, in the circulation path, other prefilters such as filter paper, cloth and wire mesh filters can be used instead of the centrifuge, or the prefilter can be omitted or the position and number of oil valves can be changed. There is no problem.
And on the fryer side, the combustion heating means is not limited to the pulse combustor but may be one using a gas burner, not limited to the type having a pair of oil tanks, or a fryer having a single oil tank. The present invention is applicable.
