本発明の乳酸菌株を用いて得られる発酵乳は、保存中の酸度上昇が抑制されている。

ストレプトコッカス・サーモフィルス(Streptococcus thermophilus) は、牛乳や乳製品中に広く存在している乳酸菌であり、チーズの製造に際しては他の乳酸菌と組み合わせて、スイスチーズやブリックチーズなどのスターターとして使用される有用菌である。また、ヨーグルトなどの発酵乳の製造に際しては、ストレプトコッカス・サーモフィルス(Streptococcus thermophilus) を単独でスターターとして製造するイギリスのマイルドヨーグルトなども知られているが、一般的には、ストレプトコッカス・サーモフィルス(Streptococcus thermophilus) とラクトバチルス・デルブルッキー・サブスピーシス・ブルガリクス(Lactobacillus delbrueckii subsp. bulgaricus) との混合スターターが使用されている。

なお、この混合スターターを使用してヨーグルトなどの発酵乳を製造するに際しては、殺菌した原料ミックスに混合スターターを添加して、所定の温度において所定の酸度になるまで発酵した後、冷却して製造する。このように、スターターとして使用するサーモフィルス菌とブルガリクス菌との間には、いわゆる共生関係があり、それぞれを単独でスターターとして使用する場合に比べて酸生成速度が速く、最終到達酸度もより高くなることが知られている。このため、発酵終了後、通常の流通温度に冷却されるまでに時間を要すると、酸度は目標とする酸度と大きくかけ離れてしまい、このことが冷却に長時間を要する製造設備で製造する場合の品質の制御を難しくしている。また、流通過程においてヨーグルトなどの発酵乳の酸度が徐々に上昇すること(アフターアシディフィケーション)が知られているが、この現象はサーモフィルス菌とブルガリクス菌の後発酵性が原因であり、製造直後の酸度制御と共に大きな課題となっている。

【発明が解決しようとする課題】
本発明者らは、ストレプトコッカス・サーモフィルス(Streptococcus thermophilus) に属する乳酸菌株の酸生成能について検討し、発酵終了後に酸の生成が起こらない乳酸菌株を得るべく、種々研究を進めてきた。その結果、37〜43℃の温度範囲で酸生成能が優れており、かつ15〜25℃の温度範囲で酸生成能が劣っているストレプトコッカス・サーモフィルス(Streptococcus thermophilus) に属する低温感受性乳酸菌株を見出した。そして、この低温感受性乳酸菌株を使用して発酵乳を製造することにより、保存中の酸度上昇が抑制された発酵乳を得ることができることを見出し、本発明を完成するに至った。

【発明の実施の形態】

【実施例1】

なお、これらの実施例では、サーモフィルス菌を単独に使用してマイルドヨーグルトを製造しているが、周知のブルガリクス菌と混合し、混合スターターとして用いることによって同様に保存中酸度上昇が抑制されたヨーグルトを製造することができた。
