本発明は、麺生地、パン生地等のドウ、大豆、線香、土等の混練製品を製造するためのスクリュウ式の混練押し出し装置に関する。

【従来の技術】
特開昭55−53543号公報には、合成樹脂成形機のスクリュウが開示され、水平配置された先太形のスクリュウ軸の外周に沿ってフライトを螺旋状に設け、このフライトのヘリックス角よりも大きい角度で傾斜する突堤をフライトのピッチ間にてスクリュウ軸外周に設けてなる構成が開示されている。この構成によれば、フライトと突堤の作用により、混練材料のバレル壁との剪断力を大きくすることができる効果を得ることができる。
特開昭62−296844号公報には、アイスクリーム等の攪拌装置が開示され、底部に押し出し孔を有してアイスクリーム等の材料の供給を受ける先細形の円錐形筒に対して、相対的に嵌合しながら逆回転ののちに正回転し該円錐筒形内の材料を攪拌して下端の押し出し孔から押し出す押し出し螺旋を設けた構成が開示されている。この構成によれば、少ない材料であっても押し出し螺旋を設けた軸部材を逆回転させることによって押し出し孔から押し出すことなく十分な混練を行うことができる効果を得ることができる。

特開昭63−47122号公報には、複合材料成形用スクリュウ押し出し機が開示され、シリンダーの内壁にスクリュウ軸線と平行な複数の縦溝を設け、供給部の縦溝の深さを計量部の縦溝の深さの1.5ないし3.0倍にする構成が開示されている。このように構成することによって十分に混練しつつ補強材材料を均一に分散させることができる効果を得ることができる。

上述した従来のスクリュウ押し出し装置においては、押し出し口が開放で横向き又は下向きであるから、押し出しスクリュウによる混練が十分に行われず、またシリンダー内壁と押し出しスクリュウとの相対的な回転運動による混練の効率が悪いという問題があった。従って、上述した従来の装置においては、所定の混練押し出しを行うために押し出しスクリュウを長く大きくしなければならなかった。

上述した従来のスクリュウ押し出し装置の上述したような問題を解決するために、本発明者は、特開平10−52214号公報において、混練効率が優れていて小型化可能で、設置面積が小さくかつ混練材料のリフト作用を有し、さらに、混練の際に脱気作用を有する混練押し出し装置を提案した。すなわち、、水平に配置された水平円筒シリンダと、該水平円筒シリンダに配置され先端側に行くに従ってピッチが小さくなる第1スクリュウ羽根を設けた混練材料投入スクリュウと、水平円筒シリンダの先端に下部を連結された垂直円筒シリンダと、該垂直円筒シリンダ内に配置され上方に行くに従って細くなる軸部に第2スクリュウ羽根を設けた垂直混練スクリュウとを有すことを特徴とする混練押し出し装置である。

【発明が解決しようとする課題】
特開平10−52214号公報に開示された混練押し出し装置においてい所期の目的は達成されたが、本発明はさらに小型化が可能であって、内部の掃除が容易であって、さらに広範囲に及ぶ加水量率(ベーカーズパーセント)の混練を可能にする混練押し出し装置を提供することを課題とする。

【課題を解決するための手段】
本発明は、傾斜して配置された円筒シリンダと、該円筒シリンダ内に配置され上先端側に行くに従って直径が小さくなり、スクリュウ突起を設けた混練軸と、上記円筒シリンダの内面に軸線と平行に取り付けられ、かつスクリュウの下端から上流の方向にその厚さを段階的に厚くした突起とを有することを特徴とする混練押し出し装置である。

【発明の実施の形態】
以下に本発明の実施例の混練押し出し装置を図に基づいて説明する。混練押し出し装置は、図1、図2及び図3に示すように、基台10の水平な回転軸線12を中心通信に回転可能に軸支された円筒シリンダー14を有する。円筒シリンダー14の傾斜角度は、基台10の端部に軸支されたボルト部材16と、円筒シリンダー14の支持枠20に取り付けられたナット22との係合によって調節される。

円筒シリンダー14の内部には、先細型の母体部材26にネジ山部28、及び径8mmの棒状突起51を設けた混練スクリュウ30が同心的に回転駆動可能に配置されている。ネジ山部28の高さは、40cmである。円筒シリンダー14は、掃除を容易に行うために、中心軸線を含む垂直断面から回転方向に135度ずれた位置で2分割されて製造され、図3に示すようにネジ36、及びヒンジ52にて両者が一体化されている。円筒シリンダー14の直径は、347.6cmである。円筒シリンダ14の内面で、軸線と平行であって傾斜させた時の上側になる位置から混練スクリュウ30の回転方向に153度及び270度ずれた位置に断面が矩形で高さが段階的に変化する角柱部材40が取り付けられている。円筒シリンダー14,混練スクリュウ30、角柱部材40の寸法は以下の通りである。単位は、mmである。

混練スクリュウは先細型の母体部材26に、ネジ山部28と、ネジ山部28の先端に径8mmの棒状突起51を10個所設けている。円筒シリンダー14の下部には、水和器44がフレキシブルパイプ46を介して円筒シリンダー14に連結されている。円筒シリンダー14の外面には、ドーナツ形の補強板50が複数個所に取り付けられている。円筒シリンダー14の支持枠20において、円筒シリンダー14に隣接して混練スクリュウ30の駆動モーター60が配置されている。

【実験例】
水和器によって麺生地を作り、その麺生地を上述した実施例の混練押し出し装置によって混練し、製麺機によって麺線とし、茹でて、麺質を調べた。すなわち、日本製粉株式会社製の中力麺用小麦粉100部と、10ボーメ度の食塩水44部を、水和器によって、125kG/Hの処理条件で処理して麺生地いわゆるそぼろを作った。
次に、円筒シリンダー14を45度傾斜させ、混練スクリュウ30の回転数を24rpm にしてそぼろ生地を混練した。この生地を20分間熟成した後複合機で8mmの麺帯とし、更に30分間熟成を取り、次いで2.5mmまで圧延した後10番角の切り刃を用いて麺線とした。この麺線を沸騰水中で14分間茹で処理をおこなった。このようにして作られた麺は、煮崩れがなく、表面が滑らかであり、手打ち麺風の腰のある麺であった。

本発明の他の実施例として、円筒シリンダー14の内面に角柱部材40を取り付けることに代えて、この位置に溝を設けてもよい。

【発明の効果】
上述した構成を有する本発明によれば、水平シリンダーの原料投入装置を必要とせず、装置をさらに小型化することが可能である。また、原料は円筒シリンダーの下側部分にのみ蓄積するから、従来の垂直円筒シリンダーのように円筒シリンダーの内面全体に蓄積するものに比較して内部の掃除が容易である効果を有する。さらに、従来40ベーカーズパーセント近傍では混練が十分に行われない傾向があったが、本発明によれば、34ないし58べーカーズパーセントの広範囲に及ぶ加水量率(ベーカーズパーセント)の混練を完全に行うことができる効果を有する。

A noodle dough was made with a hydrator, the noodle dough was kneaded with the kneading and extruding apparatus of the above-described example, noodle strings were made with a noodle making machine, boiled, and the noodle quality was examined.
