本発明は、麺を茹でるためのカップ状のざるあるいは穴あき容器(通称うどん揚げ)を用いる麺釜に関するものである。

この種の麺釜は、うどん、そば、ラーメン、パスタなどの半製品を茹でてどんぶり等に入れ、その上から出し汁等を加えて仕上げるためのもので、図3に示すように、麺を入れた穴あき容器2をガスバーナや電気ヒータなどによって加熱される熱湯槽3の沸騰水中に例えば数分間浸漬して茹で上げるものであるが、業務用の麺釜では穴あき容器2の数が多く(例えば6個)、沸騰水から熱い湯気が立ち上る上に、穴あき容器2の上端に付いている棒状の取っ手1も湯気で熱くなっているために、身体や手が熱くなるのを我慢しながら作業をしなければならないという問題があった。

【発明が解決しようとする課題】
その対策として従来より、図4に示すように、穴あき容器2の部分を残して熱湯を覆うような蓋5を設けたり、あるいは所定の時間が経過すると穴あき容器2を吊り下げている可動アーム6が自動的に上昇して、穴あき容器2を引き揚げるようにした麺釜が開発されている。このように構成すれば、蓋板5によって立ち上る湯気の量はある程度軽減されるものの、穴あき容器2を通して出てくる湯気は遮断されず、しかも蓋板5からの輻射熱のため取っ手1の温度もなかなか下がらないという問題があった。本発明はこれらの問題点を解消し、穴あき容器2の取っ手1が熱くならず、湯気も殆ど調理人の身体や手に当たらないような麺釜を提供することを目的とするものである。

【課題を解決するための手段】
本発明は、図1〜3に示すように、上端に取っ手1のついたカップ状の穴あき容器2に麺を入れ、これを熱湯槽3に浸漬して麺を茹でるようにした麺釜において、熱湯槽3の調理人側及び/又は側面側の槽壁の上端部に、ほぼ水平方向(風向としては水平方向又はやや上向きが好ましいが、水切りのため水勾配程度の下向きも可)に空気を吹き出す横長のスリット状あるいは横一列の細孔状空気噴出口4を設け、この空気流により熱湯槽3の上方の熱気を吹き払って、浸漬中の複数の穴あき容器2の取っ手1を冷却するようにしたものであり、調理人が穴あき容器2を取り上げる際に取っ手1を掴んでも熱くなく、また高温の蒸気が調理人の身体や手に当たらないので、安心して快適に調理を行うことができるという特長を有するものである。なお空気噴出口4には整流のため、数ミリ以上の水平通過部を設けるのが望ましい。そして更に、槽壁に内蔵された制御ボックス10を通して外部から空気を取り入れるようにしたことで、給気するための給気用ブロア9を取っ手1と制御ボックス10との両方の冷却に兼用すると共に、空気供給用パイプ8を省略することができる。
