このため本発明は、電極側板を長手方向に対向させて着脱自在に備えた細長状の豆腐型箱を用い、上下二段に該型箱をその電極側板側を近接させて夫々複数個以上並置し、上段では一端から他端に向けて型箱を夫々の型箱の巾方向に間欠移送する移送手段と、下段では他端から一端に向けて型箱を夫々の型箱の巾方向に間欠移送する移送手段と、上段の他端部に送られた型箱を下段の他端部に降下配置させる降下移送手段と、下段の一端部に送られた型箱を上段の一端部に上昇配置させる上昇移送手段とを備えて型箱を間欠循環させ、上端の一端部に上昇した空型箱又はその付近の空型箱に豆乳及び凝固剤を充填する充填工程と、上段の他端部までに送られる間に夫々の型箱の電極側板に通電して加熱させる豆腐加熱工程と、上段の他端部から下段の約中央部までに移送される間の豆腐熟成工程と、該熟成工程最終位置の一端側での型箱を取り出し部に移送する排出工程と、取り出し部で豆腐ブロックを取り出した後の空型箱を下段元位置まで復位させる復位送り工程と、その豆腐を取り出した空型箱の一端側での空型箱をノズル噴水で洗浄する洗浄工程とを有する豆腐の成形方法である。

【発明の実施の形態】
以下、本発明の詳細を図示した形態例で説明する。本形態例は絹ごし豆腐の成形方法であり、まず図4及び図5で示す豆腐の型箱Sを説明すると、1は電気絶縁性のポリプロピレン樹脂から成る底板であり、両端部近くに巾方向に欠設したアリ溝11に夫々同じ材質の巾側板2を係合し、上端を外側に折曲したフランジ31を有するチタン製の電極側板3を対向する巾側板2の係合溝21に上から差し込んで型箱Sとするのである。型箱Sの大きさは、通常豆腐1〜2丁分の約20cmの巾で100cmの長さとした細長状である。

なお、その巾側板2には補強金具23が取り付けてあり、底板1の下面には底板の歪みを防止する脚台兼用の補強材13が係着してある。また、電極側板3の上端フランジ31上に通電端子を圧接させて通電させ、ジュール熱の発熱で型箱を加熱するのである。

この型箱Sを用い、図1のように、上下二段の型箱配置として夫々電極側板3側を近接させて型箱の巾方向に循環させるのである。即ち、上段では一端から他端に向けて型箱Sをシリンダ5で間欠的に押し出し移送する移送手段と、下段では他端から一端に向けて型箱をシリンダ6で間欠的に押し出し移送する移送手段とを設けて上下段で逆の移送方向としている。
