本発明は、酒米の洗浄や含水に使用する浸漬タンク用水切具に係るものである。

【従来の技術及び発明が解決しようとする課題】
清酒の製造工程において、米を発酵させる前の処理工程として米を水洗いし、この米に水を浸漬させる洗米浸漬工程がある。

この洗米浸漬工程に使用される浸漬タンクには、従来は浸漬タンクの下部の排水部の側壁に水を抜くための穴開き板が設けられ、この穴開き板に浸漬タンク内の水を抜き取る水抜き孔が連設され、また、排水部の下部に浸漬タンク内の米を落下させる開閉シャッターが設けられており、前記水抜き孔を開いて前記洗浄した米の水切りを穴開き板により行って水抜きをしたり、また洗浄した米に清浄水を含浸させた後に同様の操作により余分な水分を排水したり、また、開閉シャッターを開いて清浄水を含水させた米を排水部から落下させ、次の製造工程に米を移動させたりしていた(以下、従来例という。)。

しかし、この従来例では、穴開き板の上に米が載置される構成となるため、穴開き板の穴が詰まって非常に水抜けが悪く、限度吸水(時間を決めて白米に適当に水分を吸わせる操作)を採用して清酒を製造する場合には、水切れが悪くて水抜きに時間がかかり、浸漬タンク内の上部と下部の米では吸水状態が異なってしまうなどの問題点があった。

本発明は、上記問題点を解決するもので、洗浄した米の水切りや米に清浄水を含浸させた後の余分な水分の排水を良好に行うことができ、また、清浄水を含水させた米を浸漬タンクの下部から素早く落下させることができる実用性,作業性に秀れた酒米の洗浄や含水に使用する浸漬タンク用水切具を提供することを目的としている。

洗浄米2を投入する浸漬タンクAの下部に排水部1を設けてこの排水部1から排水することで浸漬タンクA内の洗浄米2の水切りを行うように構成、若しくは洗浄米2を投入した浸漬タンクAに清浄水3を入れ前記洗浄米2に清浄水3を含水する際に排水部1から余分な清浄水3を排水することで浸漬タンクA内の洗浄米2の水切りを行うように構成した酒米の洗浄や含水に使用する浸漬タンク用水切り具Bであって、前記浸漬タンクAは、この浸漬タンクA内にして排水部1上に、水を通す周壁4を有する筒状体5を立設してこの筒状体5の外側に洗浄米2を投入する構成とし、この筒状体5の外側の水を筒状体5の周壁4を介してこの筒状体5内に通水して筒状体5の下方の排水部1から排水することで浸漬タンクA内の洗浄米2の水切りを行うように構成したことを特徴とする酒米の洗浄や含水に使用する浸漬タンク用水切具に係るものである。

図1〜4に図示した本実施例は、下部に開閉可能な排水部1を設けた浸漬タンクAに別工程で洗浄した洗浄米2を入れて水切り作業を行い、続いて、浸漬タンクAに清浄水3を入れて洗浄米2に清浄水3を含水(浸漬)させた後、浸漬タンクAの排水部1から余分な水分を排水させる排水作業を行う際に使用する酒米の洗浄や含水に使用する浸漬タンク用水切具Bであって、水を通す周壁4を設けた筒状体5を前記浸漬タンクAの排水部1上に立設した酒米の洗浄や含水に使用する浸漬タンク用水切具に係るものである。

この筒状体5の上部には、筒状体5の上部開口部12を開閉可能な蓋体13を設けている。

また、筒状体5の上部には、筒状体5を持ち上げるロープやフックなどを引っ掛け可能な係止部17を設けている。尚、本実施例では、筒状体5を持ち上げるときのバランスから、筒状体5内に棒体18をチャンネル状に架設し、この棒体18の交点に係止部17を設けている。従って、前記蓋体13を開くと係止部17を使用可能となるが、蓋体13を閉じると筒状体5(水切具B)に余分な突出部が存在しないこととなり、水切り作業や排水作業を容易に行うことができる。

筒状体5の周壁4及び蓋体13は、洗浄米2を通さず且つ清浄水3を通すことができる通水孔11をステンレス部材に多数設けたパンチングメタルで形成されている。尚、筒状体5の周壁4と蓋体13を、網材のような多孔通水孔を設けた部材や、フィルターのような通水機能を有する部材や、或いは織布のような通水織目を有する部材などで形成しても、その作用効果は同様である。また、織布のような可撓性を有する素材を使用する場合は、筒状体5が浸漬タンクAに入れた洗浄米2や清浄水3の圧力でつぶれてしまわないように、棒杆などの補強材で形状補強しなければならない。また、浸漬タンクA及び筒状体5(水切り具B)の素材は、製造する清酒の味に変化(悪影響)がないようにステンレス材などの鉄分が溶出しないものを使用することが望ましい。

以下、本実施例の使用方法について詳述する。

先ず、浸漬タンクAの排水部1を形成する排水筒10に筒状体5の下部の連設部8を嵌合して浸漬タンクAの排水部1上に筒状体5を立設する。尚、浸漬タンクAの排水口14を開閉する開閉部7は開いておき、また、取出孔15を開閉する開閉体16は閉じておく。

続いて、筒状体5の蓋体13上に別工程で洗浄した洗浄米2を置くようにして、浸漬タンクA内に洗浄米2を入れる。このとき洗浄米2の洗浄に使用した水は筒状体5の蓋体13及び周壁4を通過し、排水筒10及び開閉部7を経由して排水口14から排水される。また、洗浄米2は筒状体5の蓋体13上から浸漬タンクA内にバラバラと落下する。従って、浸漬タンクA内で洗浄米2と洗浄に使用した水とが可及的に接触しないこととなるから、洗浄米2に洗浄に使用した水が含水されないこととなる。

続いて、開閉部7を閉じて浸漬タンクA内に清浄水3を入れ、洗浄米2に清浄水3を含水させるため適度な時間放置する。

以下、本実施例の作用効果を裏付ける実験例について詳述する。

尚、試験は酒造メーカーである今代司酒造(株)にて本実施例の使用方法に準じて行い、従来例の水切り作業は本実施例の筒状体を使用せず浸漬タンクの排水筒の穴開き部を使用して行った。

洗浄した白米410kg(他用途利用米の60%精米(玄米より40%削り取った残部。))について清浄水585lを浸漬タンクに投入し、時間及び排水量を測定して表1を得た。

このように、本実施例は従来例より長い時間浸漬(含水)を行っても、従来例の約6割の水切時間で従来例と同様量の排水を行うことができ、しかも、排水後も従来例より多くの洗浄水が排水されているから、水切りが良好に行われていることが判明した。

洗浄した白米410kg(ゆきの精の62%精米)について清浄水585lを浸漬タンクに投入し、時間及び排水量を測定して表2を得た。

このように、第一実験例と同様に本実施例は従来例より排水及び水切りが良好に行われた。尚、第二実験例は第一実験例に比して、浸漬水の排水量が多くなっているが、これは、白米の品種の浸漬特性(水を吸いやすいか吸いにくいか。)や、精米率の違いのよるのではないかと推測される。

洗浄した白米410kg(五百万石の66%精米)について清浄水585lを浸漬タンクに投入し、時間及び排水量を測定して表3を得た。

このように、第一実験例と同様に本実施例は従来例より排水及び水切りが良好に行われた。また、第三実験例は第二実験例に比して、更に浸漬水の排水量が多くなっているが、第一実験例及び第二実験例の結果を含めて考察すると、高品質な酒造りに適した米を使用する程に排水量の差が大きくなっており、本実施例の筒状体は酒米の洗浄や含水に使用する浸漬タンク用水切具として秀れた作用効果を発揮するものであることが判明した。

尚、各実験例を観察したところ、本実施例は、筒状体の蓋体の上に洗浄した米が一旦乗ることとなり、洗浄時に使用した水が筒状体(特に筒状体の内側。)に沿って落下して排水されるので、洗浄に使用した余分な水が最初に排水されることとなり、排水時間が短縮され、また、浸漬タンクの上部の米と下部の米とは浸漬水によりほぼ同時に吸水が開始されるから、限度吸水によっても均一に含水されることとなり、限度吸水の時間をより一層正確に決定でき、しかも品質の安定したおいしいお酒を製造することができる。

上記実験例の結果をまとめると、
(1) 本実施例の筒状体を採用した浸漬工程では、余分な水の排水が良好に行われて排水時間を大幅に短縮することができ、また、余分な水が出易く、限度吸水を採用して浸漬工程を行う場合、正確に吸水時間を設定することができ、品質の安定した清酒を製造することができる。

(2) 本実施例の筒状体を採用した浸漬工程は、高品質な酒作りに適した米を採用したときにより一層その作用効果が発揮されることとなり、高品質のおいしいお酒の製造に特に適することとなる。

(3) 本実施例の筒状体を採用した浸漬工程は、余分な水の排水後に筒状体を取り出すことにより、浸漬された米の層に筒状体形状の穴が形成されることとなり、よって、従来、浸漬によって米が膨張し、浸漬した米が固まって浸漬タンクから落ちにくかったが、本実施例では筒状体形状の穴の部分から容易に落下させることができる。

【発明の効果】
本発明は上述のように、請求項1記載の発明においては、洗浄米を投入する浸漬タンク内にして排水部上に、水を通す周壁を設けた筒状体を立設してこの筒状体の外部に洗浄米を投入する構成としたから、この浸漬タンクの筒状体の外側の水を筒状体の周壁を介してこの筒状体内に通水して筒状体の下方の排水部から排水して、前記浸漬タンク内の洗浄米の水切りを行えることとなる。
