本発明は、魚介類を加工して食品を生産する水産食品加工に係わり、特に、魚類に脱頭及び内蔵除去を施した魚体を洗浄する魚体洗浄装置に関する。

【従来の技術】
魚介類の主な加工品には、生食用フィレー(三枚おろし)・切り身、捲塩品・塩蔵品、漬物、むき身、ボイル品等がある。例えば生食用フィレー(三枚おろし)の場合には、通常、脱頭、内蔵除去、洗浄、三枚おろし、及び真空パック詰めの一連の手順を行った後、出荷となる。

【発明が解決しようとする課題】
しかしながら、上記従来技術には、以下の課題が存在する。

すなわち、魚体洗浄工程では、内蔵が除去された魚体を洗浄するとき、開き状態の魚体の上方及び下方に設けた洗浄水噴射ノズルからの洗浄水を、魚体の上面及び下面に噴射して洗浄を行うようになっている。このため、魚体の外周側の汚れは比較的良好に洗浄できるものの、魚体の内周側の内蔵除去部分に付着した血液その他の汚れは十分に落とすことは困難であり、魚体を十分に清潔にするのが困難であった。

【課題を解決するための手段】
(1)上記目的を達成するために、本発明は、脱頭され内蔵が除去された魚体が、背骨方向に串刺しにするように差し込まれる洗浄管と、この洗浄管の上方及び下方にそれぞれ設けられ、前記洗浄管に差し込まれた魚体を上・下より狭持して搬送する上・下コンベアと、前記洗浄管に孔設され、差し込まれた状態で搬送される魚体に内周側から洗浄水を噴射して洗浄する水噴射孔とを備える。

本発明においては、頭部が除去されさらに内蔵が除去された魚体は、背骨方向に串刺しにするように洗浄管に差し込まれ、このさしこまれた状態のままで上・下コンベアから上・下より狭持され、搬送される。そしてこのとき、洗浄管に設けられた水噴射孔から洗浄水を噴射する。このようにして、魚体に内周側から洗浄するので、外周側から上・下面のみに洗浄水を噴射する従来構造に比べて、魚体の内周側の内蔵除去部分に付着した血液その他の汚れを十分に落とすことができる。この結果、魚体を十分に清潔にすることができる。

以下、本発明の一実施形態を図面を参照しつつ説明する。

図1は、本発明の適用対象である魚類加工設備に備えられた魚体処理ラインのうち、本実施形態による魚体洗浄装置1を備えた洗浄・水切りライン100の全体概略構成を表す斜視図である。

図1において、洗浄・水切りライン100は、第1洗浄ライン1A及びその下流側に配置された第2洗浄ライン1Bからなる魚体洗浄装置1と、第2洗浄ライン1Bのさらに下流側に配置された水切りライン2とから構成されている。第1洗浄ライン1Aは、主として魚体Fをまず1次的に洗浄するものであり、第2洗浄ライン1Bは、第1洗浄ライン1Aで洗浄された魚体Fをさらに2次的に清浄に洗浄して滅菌を行うものである。

これら第1洗浄ライン1Aと第2洗浄ライン1Bとに共通して、魚体Fを内周側から洗浄するための洗浄管3が設けられている。なお、図1には示していないが、第1洗浄ライン1A及び第2洗浄ライン1Bの少なくとも一方において、洗浄管3の他に、適宜、従来より公知の魚体Fの外周側から洗浄水を噴射又は流下させる外部洗浄手段(外部ノズル等)を併設してもよいことは言うまでもない。またこの外部洗浄手段で鱗の除去を行うようにしても良い(第1洗浄ライン1Aに導入する前の段階で予め脱鱗を行っておくようにしても良い)。

図2は、洗浄管3の全体構造を表す斜視図である。
この図2において、洗浄管3は、例えば両端部にブラケット(ホルダー)4が溶接等により固定されており、このブラケット4には略鉛直方向の長孔5が形成されている。一方、6は洗浄管3を図示しない固定側部材(架台等)に支持固定するための略L字状の取付部材であり、略L字状の底部を構成する水平部6aと、略L字状の立設部を構成する鉛直部6bとから構成されている。

水平部6aには貫通孔7が形成されており、前述の固定側部材を貫通させたボルト8aをさらにこの貫通孔7に下方から貫通させた後、ナット8bを締結することにより、取付部材6が固定側部材に固定されている。そして、鉛直部6bにも貫通孔9が形成されており、前述のブラケット4の長孔5を貫通させたボルト10aをその貫通孔9に貫通させた後ナット(蝶ネジ)10bを締結することにより、ブラケット4が取付部材6に取付支持され、これによって洗浄管3が固定側部材に支持されるようになっている。そしてこのとき、ナット10bを緩めてボルト10aが長孔5を貫通する位置を調整することにより、洗浄管3の高さ方向位置を調整でき、この結果、洗浄処理する魚体Fのサイズに合わせて後述の上・下コンベア12U,12Lとの相対距離を自在に調整できるようになっている。

また、洗浄管3は例えばSUS管により構成され図2に示すように上方から見て略逆L字状になっており、魚体Fの搬送方向に直線的に延設された洗浄部3Aと、この洗浄部3Aの搬送方向下流側に位置し搬送方向から左側に直角に曲折配置された導水部3Bとから構成されている。導水部3Bの端部からは、詳細な説明を省略するが、図示しない導水配管より、魚体洗浄用の洗浄水が導入されるようになっている(図2中矢印参照)。

これら図2、図3(a)、及び図3(b)において、洗浄部3Aには魚体Fの搬送方向に向かって左側(図2中では紙面に向かって奥側)側部に、上記導入部3Bから導入された洗浄水を噴出する水噴射孔11が設けられている。水噴射孔11は、詳細には、例えば略円形の3つの第1水噴射孔11Aと2つの第2水噴射孔とから構成されている。

第1水噴射孔11Aは、魚体Fの上部中心部(背骨側)に位置する脊髄部に洗浄水を噴射するためのものであり、洗浄管3の左方向水平位置に設けた噴射孔11A1、これより若干下方にずらして設けた噴射孔11A2、逆に噴射孔11A1より若干上方にずらして設けた噴射孔11A3の3つが、この順序で魚体Fの搬送方向に配列されている。噴射孔11A1以外に多少ずれた噴射孔11A2,11A3を設けることにより、魚体Fの大きさが多少不揃いであった場合や、洗浄管3に差し込まれて搬送されてくるときに多少回転して姿勢がずれていた場合にも自在に対応し、確実に脊髄部に洗浄水を噴射可能としている。また、特に脊髄部をスポット的に噴射洗浄するようにしたのは、内蔵除去後も魚体Fの腹部脊髄部には腎臓が付着していることが多く、通常この部分の除去・洗浄に最も多大な手間を要するからである。

第2噴射孔11Bは、第1噴射孔11Aでスポット的に脊髄部を洗浄した後にその周辺部に洗浄水を噴射するためのものであり、洗浄管3の左方向水平位置から主として下方側周辺部に洗浄水を噴射する噴射孔11B1と、逆に主として上方側周辺部に洗浄水を噴射する噴射孔11B2とが、この順序で魚体Fの搬送方向に配列されている。これら噴射孔11B1,11B2は、図3(b)に示すように、例えば略長細形状(スリット状、長孔状等)を備えている。

以上のようにして洗浄されつつ魚体Fが第1洗浄ライン1Aの下流側端部まで来ると、魚体Fは洗浄管3に差し込まれた状態のまま第1洗浄ライン1Aの上・下コンベア12U,12Lの終端部から第2洗浄ライン1Bの始端部に乗り換え、再び第1洗浄ラインと同様にして第2洗浄ライン1Bの上・下コンベア12U,12Lで上・下より狭持され、第2洗浄ライン1B中を図1中右方向に搬送される(図1中太矢印参照)。搬送中において同様に洗浄管3から洗浄水が噴射され魚体Fは脊髄部及びその周辺部等を中心にして内周側から洗浄される。

以上のようにして洗浄されつつ魚体Fが第2洗浄ライン1Bの下流側端部まで来ると、魚体Fは洗浄管3の洗浄部3Aの終端部に設けたリリースプレート14でガイドされて上方へ持ち上げられ、これによって導水部3Bを乗り越えるようにして洗浄管3から取り外された後、第2洗浄ライン1Aの上・下コンベア12U,12Lの終端部から水切りライン2の上・下コンベア13U,13Lの始端部に乗り換える。水切りライン2では、上・下コンベア13U,13Lで魚体Fを上・下より狭持して図1中右方向に搬送しつつ(図1中太矢印参照)、その搬送中において、詳細な図示及び説明を省略するが例えば空気噴射等の公知の方法によって水切りが行われる。

以上説明したように、本実施形態の魚体洗浄装置1によれば、第1洗浄ライン1A及び第2洗浄ライン1Bにおいて、洗浄管3から洗浄水を噴射させて魚体Fを内周側から洗浄するので、外周側から上・下面のみに洗浄水を噴射する従来構造に比べて、魚体Fの内周側の内蔵除去部分に付着した血液その他の汚れを十分に落とすことができる。この結果、魚体Fを十分に清潔にすることができる。またこれによって加工品の品質や風味を向上させることも可能となる。

本発明によれば、魚体に内周側から洗浄するので、外周側から上・下面のみに洗浄水を噴射する従来構造に比べて、魚体の内周側の内蔵除去部分に付着した血液その他の汚れを十分に落とすことができる。この結果、魚体を十分に清潔にすることができる。
