According to the present invention, as described above, when a material to be molded such as sushi rice is conveyed by a screw conveyor and is extruded through a molding hole while being compressed, the sushi rice or the like is used. The material to be molded is gradually compressed from a vertically long circular hole containing a screw conveyor and conveyed upward by a tapered hole at an upper portion thereof, and is further pushed upward through a molding hole of a molding block, thereby forming the molding hole. Then, it can be easily formed into a predetermined length, size and shape by a pair of two shutters and sensors. Further, when the molding block is molded into a predetermined shape, the molding material bites into a plurality of grooves that are linearly recessed in the extrusion direction of the molding material on the inner wall surface of the molding hole. Since the torsion of the material to be compressed and conveyed in a state where the torsion is applied is suppressed, the material to be molded is guided by each of the grooves, and the extrusion molding by the molding holes is performed straight without being twisted. Thus, it is possible to form a high-quality molded product having a uniform compression density and hardness and a good shape with no defective portion.

(57)【特許請求の範囲】(57) [Claims] 【請求項1】 寿司飯等の被成形材料を縦長円孔内でネ
ジコンベアにより下方より上方へ圧縮搬送し、成形ブロ
ックの成形孔を通して所定形状の圧縮成形材料を押出し
成形し、該圧縮成形材料を切断して所定の大きさ及び形
状に成形品を成形する食品成形装置であって、 上記成形ブロックの裏面中央部に、下端より上端へ徐々
に径小となるテーパ孔を備えた円筒部を突設し、該円筒
部のテーパ孔は、その上端が成形ブロックの成形孔と連
通合致し、一方、その下端が上記縦長円孔と連通合致
し、また、上記成形ブロックの成形孔の前後両側上面
に、二個一対のシャッターガイドブロックを一定の間隔
を置いて並行に固定すると共に、上記一対のシャッター
ガイドブロック間に、上記圧縮成形材料切断成形用の二
個一対のシャッターを左右方向に開閉動自在に配置し、
さらに、上記シャッターの対向閉動による切断時の圧縮
成形材料の押し出し長さを検知するセンサーを配置し、
かつ上記成形ブロックの成形孔内壁面に、被成形材料押
し出し方向に複数の被成形材料案内用凹溝条を設けてな
ることを特徴とする食品成形装置。
