Therefore, the blade can be sharpened even in the curved surface sharpening portion 12 by using the both end portions 12a to enter the narrow valley of the blade.

前記握り手部20は、プラスチック成型として前記芯材40を被覆する形で取り付けられており、前部に円弧状の鍔20aを構成している。該鍔20aを設けたことにより、研ぎ具1を前後に動かして刃を研ぐ作業において、鍔がストッパの役目を果たして、研ぎ部や刃物に手が当たって傷付くことなく安全に使用することができると共に、握り手を鍔20aに当接させることにより前方向への力を押出し易くできるようにしている。
前記握り手部20は後端方向に緩やかに広がる幅広形状20bで構成している。これによって握り易く、また刃研ぎ作業中において握り手部20を後方へ引く時に手が滑り難く、また抜け難い形状にしている。
前記握り手部20の後部には孔20cが構成されており、これに紐等を通すことにより研ぎ具を吊り下げて保管することができる。また鍔20aを利用して台所の包丁差し等に差しておくこともできる。

表面がダイヤモンド砥粒で被覆される研ぎ部と、該研ぎ部を保持する握り手部とで構成される研ぎ具であって、
研ぎ部は、その表裏面のそれぞれに平面研ぎ部と曲面研ぎ部とを構成してあることを特徴とする研ぎ具。
