ると、従来練り製品原料として不適当とされていた低品
質の摺り身からも、また通常よりもさらに水延ばしさせ
て製造した場合においても、保形性及び成形性を保持し
たまま、弾力のある高品質の練り製品の製造が可能とな
った。また、これにより天然資源の有益な活用が期待さ
れる。更に、実際の製造現場でTGや乳酸カルシウム等
の有機酸のアルカリ土類金属塩をそれぞれ別個に計量す
るよりは、本発明の酵素製剤を使用する方がはるかに簡
