効果により、優れた血清コレステロールの低下作用を示
し、その効果はコレステロール低下剤であるコレスチラ
ミンに匹敵するとされている。以上のような作用をもつ
キチン及びキトサンは、現在では種々の食品に添加され
る事も多い。しかし、キチン及びキトサンは独特の生臭
さを持っており、食品に添加すると食品の香りを著しく
害するため、従来は、添加量を低くするか、あるいは香
りの強い食品に添加することに限定するなどの方法をと
っていた。

限はないが、キチン又はキトサン重量に対し処理に要し
た水量の合計が3〜100倍より好ましくは10倍〜1
00倍になるように処理を繰返すことが望ましい。
