し、醸造用大豆を得た。一方、対照例として丸大豆を16
時間水浸漬した後、NK缶にて蒸煮圧力2.0kg/cm2 で5分
間蒸煮処理して醸造用大豆を得た(対照品1)。また丸
大豆を1/4〜1/8に割砕後、割砕大豆重量に対して
100%撒水し、これを連続蒸煮缶にて蒸煮圧力3.0kg/cm
2 で2分間の蒸煮処理をして醸造用大豆を得た(対照品
2)。またさらに、フレーク状脱脂大豆に、該大豆重量
に対して 120%撒水し、これを連続蒸煮缶で2.0kg/cm2
で4分間蒸煮処理して醸造用大豆を得た(対照品3)。

法により、それぞれ炒麦と混合し、種麹を接種後製麹し
て得られた麹を塩水と共に仕込み、熟成させて生醤油を

み、5ケ月間醸造を行ない圧搾、火入を行ない、醤油を
得た。得られた醤油はN性おり、酢酸おり及び煮沸おり
が発生せず、香りが芳醇で淡色かつ透明感があり、しか

味噌は、芳醇な香気を有し、淡色系ながら旨味をもった
