る)は下記(1)式で示される化合物であって、麹酸と
も呼ばれている。本化合物は微生物によっても各種炭水
化合物から生成されるが、市販品があるのでこれを使用
すればよい。

由は定かではないが、5−ハイドロオキシ−2−ハイド
ロオキシメチル−γ−ピロンの抗菌力及び吸水性紙又は
不織布による褐変酵素の吸収除去作用の相乗効果による
ものと推定される。
