に安定した力がまな板表面に加わわるのでまな板に刃先
1が食い込んで深い傷を付ける事がない。まな板表面の
細かい切り傷の中に付着した食物かすは刃先1に依りま
な板表面から掻き出され刃先1と前板2に固まって付着
するので適時水洗いや拭き取りでこれを除去する。ま
た、漂白剤の原液をまな板の表面に少量流した状態で使
用するとまな板表面の細かい切り傷の中に漂白剤が効果
