(57)【特許請求の範囲】(57) [Claims] 【請求項1】少なくとも3基の圧力容器を備え、該圧力
容器内のそれぞれにフリーピストンを備え、該フリーピ
ストンによってそれぞれの圧力容器は仕切られてフリー
ピストンの両側に二室を形成し、フリーピストンは前記
二室のそれぞれにおいて等しい液圧となる平衡位置に自
由移動可能でかつそれぞれの圧力容器の軸方向に摺動自
在とされ、該フリーピストンによって仕切られた一方の
室のそれぞれに共通して接続されている圧媒給排装置を
備えているとともに、他方の室のそれぞれに共通して接
続されている被処理物の供給装置と処理済の被処理物を
回収する回収装置とを備えている処理装置を用いる食品
素材の加圧下処理方法であって、 前記圧力容器のうち一基目の圧力容器では、当該容器内
の圧媒を抜きつつ供給装置から被処理物を前記一方の室
に充填供給し、二基目の圧力容器では、当該容器の一方
の室に供給している被処理物を、当該容器内のフリーピ
ストンに圧媒圧力を作用させることで加圧し、三基目の
圧力容器では、当該容器内で加圧処理済の被処理物を、
圧媒の供給による当該容器内のフリーピストンの容器軸
方向の摺動により回収することを特徴とする食品素材の
加圧下処理方法。

ンのそれぞれに、開閉弁を設け、該開閉弁のそれぞれと
前記一方の室との間の分岐ラインに、圧媒排出用バイパ
スラインを接続し、該バイパスラインのそれぞれに開閉
弁を設け、更に、前記被処理物の供給装置の供給共通ラ
インに、前記他方の室のそれぞれに接続する分岐ライン
を設け、該分岐ラインのそれぞれに、開閉弁を設け、該
開閉弁のそれぞれと前記他方の室との間の分岐ライン
に、前記回収装置に接続した回収用バイパスラインを設
け、該バイパスラインのそれぞれに開閉弁を設けている
ことを特徴とする食品素材の加圧下処理装置。
