本発明は、餅を包装後、加熱殺菌し、開封して餅を食
する時に絵付または着色されている餅の包装方法に関す
るものである。
現在、市販されている包装された切餅、平餅は、包装
するフィルムに印刷により、絵柄、文字等が表示されて
いるが、一担開封された餅は、絵柄のない白い餅となっ
てしまう。
そこで餅に可食性インキにより直接印刷し、絵柄を施
すことが可能であるが、餅の表面が凹凸状態のためきれ
いに印刷できないうえ、可食性インキが乾燥し易く、実
際にはうまくできないものである。
また、餅の表面に可食性インキによりプルラン等の可
食性フィルムにより絵柄を設けたラベルを貼付させる方
法があるが、餅の水分により前記ラベルがべたついた状
態になってしまい餅としての違和感があり、使用するこ
とは困難である。
本発明は、包装前においては白い餅であるが、開封し
食する時には所定の絵柄が施されている餅の包装方法を
提供することを目的とする。
以下、本発明について説明する。
所定の大きさの餅を内面に可食性インキにより絵柄ま
たは着色層を設けた積層フィルムにより脱気包装後、50
℃以上の温度でボイル殺菌、レトルト殺菌等の加熱殺菌
し、同時に絵付を行なう餅の包装方法である。
ここで、本発明で使用する積層フィルムの構成とし
て、ポリエチレンフタレート／ポリプロピレン、延伸ナ
イロン／ポリプロピレン、ポリエチレンテレフタレート
／延伸ナイロン／ポリプロピレン、延伸ナイロン／高密
度ポリエチレンのように外層が耐熱性フィルム、内層が
熱シール性を有するフィルムで透明なものが適当であ
る。
また、可食性インキは、ポリビニルピロリドン、シェ
ラック等の無毒の水溶性樹脂、でんぷん、飲料アルコー
ル、食用タール色素等を組合せればよい。
次に本発明により絵付された餅の状態を実施例を挙げ
て説明する。
＜実施例＞
切餅を内面に可食性インキ（リオフレッシュレッドＦ
−550 東洋インキ製造（株））により絵柄を設けたポ
リエステル／ポリプロピレンからなる積層フィルムによ
り脱気包装後、各種温度により加熱殺菌し、餅への絵付
の状態をテストした。
この結果を表１に示す。
上記表１より明らかなように50℃以上の温度で餅を加
熱殺菌した場合、加熱殺菌と同時にきれいな絵付が施さ
れる。この餅の絵付け状態は、餅に浸透した状態でさ
れ、絵付された餅を煮たり、焼いたりの調理をしても絵
柄を落ちずに残った。
以上のように本発明は、特別の絵付工程を施さずに、
従前の餅の包装方法を利用してそのまま行なうことがで
きるので、安価にしかも容易に絵付けまたは着色を施す
