2. Description of the Related Art In recent years, with the development of encapsulation technology, various methods of producing fish roe-like foods such as salmon roe and sardine using this encapsulation have been proposed. And, most of these production methods use the encapsulation utilizing the reaction of sodium alginate or low methoxyl pectin and calcium ions as the production principle. Also, gelatinize gelatin once,
There is also a method of forming a calcium alginate gel around the gel.

By the way, in the method for producing salmon roe-like artificial fish roe, it is essential to incorporate oil droplets inside a fish roe-like capsule formed in a spherical shape in order to approximate the appearance to salmon roe. Incidentally, the general composition of salmon roe is water 53% and lipid 15%, and oil droplet-like parts are observed inside salmon roe.

Conventionally, as a method for producing an artificial fish egg containing oil droplets, 2
The heavy tubular nozzle is used to release the oil phase from the inner nozzle and the sol-like aqueous phase containing pectin and gelatin from the outer nozzle to form a droplet in which the oil phase is encapsulated in the sol. After dipping in a sodium alginate aqueous solution and then dipping in a calcium chloride solution to gelate the coating layer (Japanese Patent Publication No. 61-43029) and an emulsified solution obtained by adding calcium chloride and an oily raw material to a sol to emulsify the alginate. A method of dropping into an aqueous solution to obtain granules, and exposing the granules in hot water to separate and enclose an oil layer made of an oily raw material and a water layer made of an aqueous raw material in the powder (Japanese Patent Publication No. 61-4509). Etc. have been proposed.

However, in the method using the double pipe nozzle, in order to add the oil phase to the water phase at a fixed ratio and to incorporate the water phase, the arrangement of the nozzle and the feeding amount of the water phase and the oil phase to the Nords are delicately measured. There is a work problem that needs to be adjusted.

Further, the method using the emulsified liquid has a problem that the amount of oil droplets in the artificial fish egg is not constant. That is, the emulsification is an operation of making liquids that are originally immiscible with each other seemingly in a solution state, and since the emulsified liquid is an unstable system, rising separation of oil droplets called creaming occurs over time after emulsification, Therefore, there is a drawback that the oil phase / water phase ratio of the artificial roe fluctuates during production.

Structure of the invention The feature of the present invention is to mix an oily raw material liquid into a calcium-containing aqueous liquid flowing in a pipe by a pump, and irradiate the mixture with ultrasonic waves or apply a shearing force to remove the oil phase in the mixture. A salmon roe-like artificial fish egg containing oil droplets is produced by dispersing the oil droplets in the form of finely divided oil droplets and then dispersing the mixture into a sodium alginate solution or a low methoxyl pectin solution to encapsulate the mixture. On the way.

Means for Solving the Problems The present invention, as described above, an aqueous raw material and an oily raw material containing calcium are contacted with an aqueous solution of sodium alginate or low methoxyl pectin to be encapsulated to give a salmon roe-like artificial roe. In the production, the step of mixing the aqueous raw material and the oily raw material through the nozzle into the aqueous solution through the nozzle, mixing the oily raw material by a pump into the calcium-containing aqueous liquid flowing in the pipe and the mixture. An important feature is to continuously perform a step of irradiating ultrasonic waves or applying a shearing force to finely disperse the oil phase in the mixture into fine oil droplets.
At this time, using a mixer as illustrated in the drawing attached to the mixing step, liquid oil and fat is made to flow from the pipe 2 into the aqueous liquid flowing in the pipe 1, and the flow rate of each pump (for example, roller pump) is adjusted to a constant amount. It is preferable to adjust so that

In the present invention, the aqueous raw material mixed with the oily raw material as described above is supplied to the dispersion step. The mixed solution sent to the dispersion step is subjected to ultrasonic irradiation or shearing action to finely disperse the oil phase in the mixed solution.

To perform this micronization dispersion by ultrasonic irradiation, for example, the mixed liquid is fed from one end of a pipe arranged in a spiral shape by a pump, and an ultrasonic oscillator is provided below the pipe to apply ultrasonic waves. Meanwhile, it is preferable to discharge the mixed liquid from the other end of the pipe. At this time, it is appropriate that the irradiation time of ultrasonic waves is 3 to 5 minutes.

On the other hand, in order to carry out fine dispersion using the shearing action, for example, an impeller pump may be used to disperse the oil phase by the shearing force generated by the rotation of the impeller. Also,
A gear pump may be used instead of the impeller pump.
That is, the mixed liquid is supplied from the lower supply port of the impeller pump and discharged from the discharge nozzle above the pump through the impeller.

By irradiating the mixed solution with ultrasonic waves or applying a shearing force as described above, the oil phase in the mixed solution is atomized into oil droplets having a diameter of about 0.2 mm and dispersed in the aqueous raw material. In this case, since the amount of the oily raw material mixed in the aqueous raw material can be adjusted as described above, the dispersion ratio of the oil droplets formed by miniaturization is almost constant, and there is little variation.
In this dispersion, it is not preferable to form a system that is stable for a long time, such as emulsification.

Next, the aqueous raw material in which the oil droplets are dispersed is dropped from a nozzle into a sodium alginate aqueous solution or a low methoxyl pectin aqueous solution for encapsulation. Collecting the granules obtained by encapsulation from the above aqueous solution, and washing with water to remove sodium alginate or low methoxypectin adhering to the capsule and the calcium salt contained in the core liquid contained in the capsule, A salmon roe-like artificial fish egg containing oil droplets can be obtained.

As described above, according to the present invention, it is possible to mix an oily raw material in a desired ratio with an aqueous raw material, and the oil phase in the mixed liquid is atomized by a specific means and dispersed in a desired ratio as an oil droplet. Therefore, by encapsulating this, there is an advantage that a salmon roe-like artificial fish egg containing almost uniform oil droplets can be efficiently produced by a continuous method.

The respective solutions obtained as described above were mixed using the mixer shown in the attached figure while adjusting the flow rate of the roller pump so that the ratio of the aqueous raw material: the oily raw material was 87.5: 12.5. This mixed solution is fed from one end of a pipe arranged in a spiral shape, and while being irradiated with an ultrasonic oscillator provided below the pipe at a frequency of 45 KHz for about 4 minutes, from the other end of the pipe.
