With respect to the complex salts obtained in Examples 1 to 7, calcium was quantified by atomic absorption spectrometry. Also,
The free acid was quantified by gas chromatography, and then the lactic acid in lactate was quantified by the enzymatic method. The amount of water of crystallization was determined by the Karl Fischer method. The sodium and potassium quantification of the complex salts obtained in Examples 1 to 4 and 6,7 was carried out by flame spectroscopy. The nitrogen content of the complex salt obtained in Example 5 was determined by elemental analysis.
Ammonium was quantified. The result is the first

(Effects of the Invention) As described above, the present invention is characterized by the fact that the lactate represented by the general formula I is in the form of solid, powder or powdery flakes having low hygroscopicity. Since it is easy to mix with, it is easy to use and extremely effective when used in foods, cosmetics, industrial chemicals and the like. Moreover, since the amounts of sodium salt, potassium salt and ammonium salt can be changed within the range of m, a powdery lactic acid complex salt can be obtained according to the purpose of use.
