作製した試験飲料1-1~1-5について、専門評価パネル5名にて官能評価を行った。具体的には、表1に示す試験飲料1-1~1-5に対して、「苦渋み」、「後味の良さ」、「飲みやすさ」および「飲みごたえ」について比較評価することで行った。各評価点数は、下記評価基準に従って各パネルが付けた評価点数の平均値として算出した。当該評価は、カテキン類が未添加である飲料(基準品1)の点数を基準値(4点)として評価した。

実施例1で作製した試験飲料1-4(カテキン類の含有量:860ppm)に、ジヒドロジャスモン酸メチルを表3に示す含有量(50ppb)になるように添加し、試験飲料3-1を作製した。試験飲料3-1に含まれるジヒドロジャスモン酸メチルの含有量は、実施例2で用いたガスクロマトグラフ質量分析装置(GC/MS)および測定条件で測定した。
(Preparation of test beverage 3-1)
Test beverage 3-1 was prepared by adding methyl dihydrojasmonate to test beverage 1-4 (catechin content: 860 ppm) prepared in Example 1 so as to obtain the content (50 ppb) shown in Table 3. The methyl dihydrojasmonate content in test beverage 3-1 was measured using the gas chromatograph mass spectrometer (GC/MS) and under the measurement conditions used in Example 2.
(官能評価)
作製した試験飲料3-1について、専門評価パネル5名にて官能評価を行った。具体的には、カテキン類の含有量が860ppmであり、ジヒドロジャスモン酸メチルが未添加である基準品3に対して、ジヒドロジャスモン酸メチルを上述の含有量になるように添加し、試験飲料3-1の「苦渋み」、「後味の良さ」、「飲みやすさ」、「飲みごたえ」、「おいしさ」について比較評価することで行った。当該評価は、基準品3(ジヒドロジャスモン酸メチルが未添加の飲料)の点数を基準値(4点)として評価し、各評価点数は、実施例2と同様の評価基準に従って各パネルがつけた評価点数の平均値として算出した。

A sensory evaluation was performed on the prepared test beverage 3-1 by a panel of five expert evaluators. 表3に、試験飲料3-1に含まれるジヒドロジャスモン酸メチルの含有量、および官能評価の結果を示す。評価における「苦渋み」については、上記評価基準にあるように、小さくなるほど、「苦渋み」を感じられにくくなっており評価が高いことを意味する。また、「後味の良さ」、「飲みやすさ」、「飲みごたえ」および「おいしさ」については、上記評価基準にあるように、点数が大きくなるほど評価が高いことを意味する。
