次いで、オリーブ油の臭いに対する評価結果を説明する。評価1から評価4は、実施例1から実施例3のオリーブ油を用いて、10人の試験者による臭いの官能評価を行った。実施例1から実施例3のオリーブ油は、酸価が一定であり、過酸化物価が異なっている。表1は、評価結果を示している。評価1は、フレッシュなオリーブ油の臭いを感じるか否かの評価であり、実施例1と実施例3のうち、フレッシュなオリーブ油のよい香りがする方を選択してもらった。表1の数字は、選択した人数である。具体的には、評価1においては、8人の試験者が実施例1のオリーブ油がフレッシュなオリーブ油の臭いがすると評価し、2人の試験者が実施例3のオリーブ油がフレッシュなオリーブ油の臭いがすると評価した。評価1の結果から、過酸化物価は、フレッシュなオリーブ油の臭いに関して、30(meq/mg)よりも10(meq/mg)の方が好適であることがわかった。また、評価2から評価4は、劣化したオリーブ油の臭いを感じるか否かを評価し、劣化したオリーブ油の臭いがする方を選択してもらった。評価2は、実施例1と実施例3のうち、劣化したオリーブ油の香りがする方を選択してもらった。評価2によれば、実施例1は、実施例3よりも劣化したオリーブ油の香りがしないと判断された。評価3は、実施例2と実施例3のうち、劣化したオリーブ油の香りがする方を選択してもらった。評価3によれば、実施例2は、実施例3よりも劣化したオリーブ油の香りがしないと判断された。評価4は、実施例1と実施例2のうち、劣化したオリーブ油の香りがする方を選択してもらった。評価4によれば、実施例1は、実施例2よりも劣化したオリーブ油の香りがしないと判断された。当該結果から、過酸化物価は、オリーブ油の劣化した臭いに関して低い方が好ましい。オリーブ油の過酸化物価は、好ましくは、20(meq/mg)以下であってよく、より好適には、10(meq/mg)以下であってよい。
