Description

The present invention relates to a microwave heating container and a method of using the same for baking a flour-containing food such as bread dough using a microwave heating element that generates heat by microwaves in a microwave oven.

By using a heating element (susceptor) that generates heat from microwaves generated from a microwave oven, the food is baked to produce baked eyes and a crispy texture that are difficult with microwave heating. The technology is known and has been used for pizza, fried potatoes, fried chicken, grilled fish and fillets, etc. (for example, Japanese Utility Model Publication No. 1-82829, Japanese Patent Application Laid-Open No. 2006-75617, Japanese Patent Application Laid-Open No. 2008). -62990 publication etc.).
On the other hand, Japanese Patent Application Laid-Open No. 2005-82197 is known as a microwave oven heated paper tray that can store food such as frozen pizza and can obtain food such as pizza without losing the texture and flavor. Yes.
In the above configuration, a microwave heat generating layer is provided on the surface of a sheet-like base material at the bottom of the paper tray main body, and a susceptor in which a paper base material is laminated on the microwave heat generating layer is inserted.
However, in this microwave-heated paper tray, the frozen pizza dough is stored frozen so that food can be obtained simply by heating the frozen product of the baked dough in a microwave oven, but unbaked. The freshly baked flavor and texture obtained when baking the dough raw material were inferior, and browning (baked eyes) could not be applied.
In the case of bread dough, generally, the straight method requires a primary fermentation step, a secondary fermentation step, and a baking step, and the frozen dough-baked bread dough or semi-baked The dough was thawed and then baked in an oven for several tens of minutes. However, baking in the oven took time, and it was impossible to cook in a short time using a microwave oven.
Therefore, development of a container that can be baked in a short time using microwaves in a microwave oven for a non-baked cereal flour-containing dough such as bread dough has been awaited.

As a result of earnest research and development in view of the above circumstances, the present inventors have obtained the following knowledge and completed the present invention.
That is, when baking fermented frozen flour containing dough using a microwave oven, the frozen dough passes through the microwave as it is and heats the heating element immediately, but in the same microwave oven separately from the dough By heating water and other liquids at the same time, the microwaves can be absorbed by water and the water in the liquid, and the microwaves absorbed by the dough in the box-type container can be reduced, reducing the heating temperature and extending the heating time. can do.
Thereby, it can bake on the surface without baking unevenness, suppressing the evaporation of the water | moisture content in the said dough and moisturizing the dough.
At the same time, water or water in the liquid is evaporated and the heating chamber of the microwave oven is humidified by the generation of steam, thereby preventing overdrying in the heating chamber environment when the dough is baked.
Accordingly, the main problem of the present invention is that when dough-containing foods such as bread dough are heated in a short time by microwaves in a microwave oven and baked with good texture without uneven baking, the dough is stored in a box-type container. The object of the present invention is to provide a heating container in which water or liquid is put in a cup and heated simultaneously in a microwave oven and a method of using the same.

(1) The microwave heating container of the present invention is composed of a container body and a lid assembled in a box shape. By using a lid that can be opened and closed, the inside of the container can be confirmed and reheated. .
In addition, when there is a variation in the disappearance of moisture depending on the position in the dough when the dough stored in the box-type container is baked by the microwave oven, a part of the baked food is dried and hardened, It is necessary to replenish the water, but the capacity of the water to be replenished is related to the capacity of the dough in the box-type container.
Therefore, by using a cup capable of storing a predetermined amount of water and simultaneously heating in a microwave oven, a food with excellent appearance and taste can be cooked by heating for a certain period of time.
(2) The microwave oven used is preferably an intermittent heating microwave oven.
(3) A box-shaped container has a cylindrical or prismatic container body, the inner volume is in the range of 185 cm 3 to 230 cm 3 , and the container body height is in the range of 30 mm to 70 mm. Is filled with about 90 to 120 g of water, so that a flour-containing dough such as bread dough can be baked in about 3 minutes to 4 minutes and 30 seconds.
(4) By heating the container or the container or the water or liquid stored in the cup in the microwave at the same time, the microwave can be absorbed by the water in the container. The microwave absorbed by the dough can be reduced, heat generation can be suppressed, and the heating time can be extended.
Thereby, it can bake without baking unevenness, suppressing moisture evaporation in the dough and keeping the moisture.
At the same time, generation of steam from water or water in the liquid humidifies the environment in the heating chamber of the microwave oven, preventing overdrying in the heating chamber, and preventing the dried dough from drying.

In the present embodiment, the box-type container 1 is filled with a flour-containing dough 20 such as bread dough that has undergone primary fermentation (see FIG. 8A), and then the fermentation microorganisms are activated in the container to perform secondary fermentation ( For example, it is performed at 20 ° C. to 40 ° C. for about 20 to 80 minutes) (see FIG. 8B).
The dough expanded by the in-container fermentation is in close contact with the inner wall surface of the container body 2 without substantial gaps, and the lid 3 is closed so that the top surface of the dough is in close contact with the inner wall surface of the lid body 3 without substantial gaps. The lid 3 is hooked to the container body 2 by the hooking portion 4 (see FIG. 8C).
Thereafter, it is stored frozen at a low temperature (for example, −18 ° C. or lower) until use.

The shape or inner volume of the inner wall surface of the container 1 corresponds to the dough to be baked, and the dough has a capacity that can be baked with a preset heating time of a microwave oven, and expanded during secondary fermentation. The outer surface of the dough containing grain flour such as bread dough needs to be set to a shape that is surrounded by each inner wall surface of the container and is in close contact with each surface.
In order for the outer surface of the dough expanded by fermentation in the container to be in close contact with the inner wall surface of the container 1 without a substantial gap, the inner wall surface is preferably a flat surface or a gentle curved surface, but a stepped portion may be formed.
In addition, the container body has a low cushion-like shape that is not limited to fermentation and is not preferable for firing, and preferably has a certain range of heights corresponding to the bottom surface.

In a present Example, the case where honey bread is used for cloth is illustrated.
As an example of the ingredients of the dough, when the powder of cereals such as wheat flour is 100, dry yeast is an appropriate amount (for example, 2-3), salt is an appropriate amount (for example, 1-2), and sugar or honey is an appropriate amount (for example, 5 to 16), edible fats and oils such as butter were used in a ratio of 0 to 30 and moisture in a ratio of 50 to 80.
When the dough is baked in a 500 W microwave oven, when the dough weight is in the range of 90 g (capacity 185 cm 3 ) to 210 g (400 cm 3 ), the heating time is 3 minutes 30 seconds to 8 minutes and the appearance and texture are satisfactory. was gotten.
Therefore, when baking for about 4 minutes to 4 minutes 30 seconds in a 500 W microwave oven (inverter type such as a flat table type), the weight of the dough was preferably 110 g, so the container shape was examined based on this.

The internal volume of the container 1 corresponding to the dough weight is 200 cm 3 .
Here, as a result of examining the appearance (browning) and texture in the range of 20 to 100 mm, the height of the container 1 having the same internal volume for the three types of cylinder, regular quadrangular prism, and prismatic column, there is no difference due to the cross-sectional shape, It has been found that the height of the container is good in the range of 30 to 70 mm, more preferably 40 to 60 mm.
Therefore, even when the heating time is increased or decreased, it is preferable that the ratio of the inner volume of the container body and the height of the container body is set correspondingly.

[cup]
The cup C is composed of a cup having an open top surface, and a cup made of a material that can be used in a microwave oven such as a paper cup, plastic, ceramic, or metal is used.
The cup C has an internal volume capable of storing a volume of water or liquid having a certain relationship with the volume of the dough corresponding to the internal volume of the box-type container 1.
In this example, 90 to 120 cc of water W was used, but the capacity can be appropriately adjusted according to conditions such as the use time of the microwave, the capacity of the dough, the composition of the raw material, and the like.
Instead of water, beverages such as coffee and tea, and liquid foods containing the same amount of water may be used.

When the box container 1 containing the dough 20 is baked in the microwave oven M, the cup C is stored in the 500 W microwave oven M together with the box container 1 and the dough baking time (for example, 4 to 4 minutes). 30 seconds) (see FIG. 9).
Here, although the structure of the microwave oven M is not ask | required, the structure of an intermittent heating type (turntable type etc.) is preferable compared with a flat table type.
As mentioned above, since the water W contained in the cup C is put into the microwave oven M at the same time, the microwave absorbed by the water W reduces the microwave absorbed by the dough in the box-type container 1, and the inside of the dough Heating while keeping moisture moisturized while suppressing evaporation of water, extending the heating time slightly (for example, extending about 30 seconds) compared to the case where water is not put into the microwave oven M at the same time, and firing without causing uneven baking. Can do.
At the same time, the generation of water W in the cup C humidifies the heating chamber environment of the microwave oven M, and overdrying in the heating chamber C of the microwave oven M can be prevented.
Of course, the present invention is not limited to the above-described embodiments, and various design changes can be made without departing from the scope of the present invention.
