強力粉600g、そば粉400g、食塩10g、水300gを配合し、ミキサーで15分間混捏し、常法に従って圧延、切り出し(切り歯#22角、麺線厚み1.3mm)を行って得られた麺を沸騰水中で3分間茹で上げ、流水で30秒水洗し、茹で麺を得た。次に、各ほぐれ改良剤を茹で麺200gあたり6g均一に噴霧し、容器に充填、密封し、1日冷蔵保存後のほぐれ性をパネラー10名で評価した。各パネラーは表1の基準に基づき1〜5点で評価し、その平均点をほぐれ性評価とした。平均点が4点以上であれば、ほぐれ性が良好と判断した。
