(3)パン焼成後2日間室温にて保管した後、ソフトさ、しっとり感、口溶けについて、熟練パネラー10人による官能検査を実施した。官能検査の評価基準として以下基準を使用した。
◎:良好
○:やや良好
△:やや不良
×:不良
評価の結果を下記表3にまとめて示す。
