The sensory evaluation test was performed by taking the product properties into consideration from the touch and taste. The scoring of evaluation is shown in Table 2, and was performed in 5 stages from 1 (defect) to 5 (good). The results are shown in Table 1.

[実施例2:乾燥スープ]
粉末原料として表4の配合で均一混合したスープ粉末を用い、トリアセチン(純度99%)、ポリグリセリン脂肪酸エステル(阪本薬品社製::商品名「SYグリスターML−750」)を使用し、表3に示す組合せのサンプルを作成した。サンプル10は、流動造粒乾燥機を使用し、表4のスープ粉末300gに対して1%馬鈴薯澱粉溶液を30g噴霧し、70℃、15分間、流動造粒乾燥を行い作成した。各々の該サンプル15gを、5℃に調製した牛乳(市販品)15mlに各添加して30秒間攪拌し、該撹拌時の状態観察を行った、また、撹拌終了後に、10人のパネルにより、舌触り及び風味の官能から製品性を考慮した官能評価試験を行った。評価の採点は、表2に示し、1(不良)〜5(良好)の5段階で行った。結果を表3に示した。
