従来の殺菌は、培養基を個々の容器内に充填して、培養基を容器ごと殺菌釜に収納し、常圧或いは高圧で一定時間、加熱することにより行っていた。

本実施形態では、オガクズに栄養材を加えて水分調整をする際の水分調整用の水として、二酸化塩素水溶液を用いる。二酸化塩素水溶液における二酸化塩素濃度は、0.6〜50ppmであると好適である。
水分調整用として必要な所定量の二酸化塩素水溶液を原材料に添加し終わった後も、撹拌を所定時間続けるとよい。これにより、原材料が均一に混ざり合った培養基を作製できるとともに、原材料に二酸化塩素を均一に作用させることができる。

また、二酸化塩素の殺菌力は数時間程度で減衰し無害となるので、キノコに悪影響を与えることもなく、防カビ剤等の使用と比較して食品安全性の面からも有利である。
また、二酸化塩素の発生源として、水に溶解させることで二酸化塩素を発生する薬剤を使用すれば簡単に二酸化塩素水溶液を得ることができ、効率良く効果的な培養基の殺菌を行うことができる。
このように前記方法によれば、培養基を効果的に殺菌することができるので、キノコの成長がバクテリアやカビ類等によって阻害されることがなく、高品質のキノコを高収穫することができる。
