本発明は、前発酵ヨーグルトの製造過程における、発酵及びカード破砕終了後のタンク内ヨーグルトの粘度測定方法に関する。

【従来の技術】
従来、発酵及びカード破砕が終了したヨーグルトの粘度が規定値であるかを検査するためには、貯蔵中のタンクよりヨーグルトをサンプリングし、B型粘度計などを用いて粘度を測定していた。しかし、この方法では、ヨーグルトのサンプリング工程を必要とし、歩留まりの低減という問題が生じていた。

従来、密封容器内の内容物に直接アクセスすることなく、内容物の液体/固体変化状態を判定する方法が提案されている(特許文献1参照)。また、パン生地等の混捏工程のミキサー負荷を検出することで、パン生地等の状態変化をモニタリングする方法及びその装置が開示されている(特許文献2参照)。しかし、前者は、容器充填後に発酵させる、いわゆる「後発酵ヨーグルト」の製造を想定した場合である。また、後者は、パン生地の粘弾性の最高レベルを検出してミキシング終了時を判定する方法である。従って、いずれの方法も発酵により得られたゲル状のカードを撹拌・破砕して流動化した後、小売り容器に充填する、いわゆる「前発酵ヨーグルト」の製造には適用することができない。

【発明が解決しようとする課題】
本発明は、上述の課題を解決するために提案されたもので、その目的は、前発酵ヨーグルトの製造過程において、発酵及びカード破砕終了後のタンク内ヨーグルトをサンプリングすることなく、すなわちインラインで、その粘度をモニタリングできるタンク内ヨーグルトの粘度測定方法を提供することである。

【課題を解決するための手段】
本発明者らは、タンク内ヨーグルトをサンプリングすることなく、その粘度をモニタリングすべく鋭意研究した結果、発酵及びカード破砕終了後貯蔵中のタンク内ヨーグルトを撹拌するアジテータのモータ負荷が、タンク内ヨーグルトの量(レベル)と直線性を示すことを見出し、本発明の完成に至った。

すなわち、請求項1に記載の発明は、前発酵ヨーグルトの製造過程において、発酵及びカード破砕終了後のタンク内ヨーグルトの粘度をインラインで測定する方法であって、以下の相関関係:
(a)タンクアジテータのモータ負荷が、タンク内ヨーグルトのレベルと直線性を示すこと、及び

従って、上述のアジテータのモータ負荷がタンクレベルと直線性を示し、かつアジテータのモータ負荷がヨーグルトベースの見掛け粘度に比例するという相関関係を利用することで、アジテータのモータ負荷からヨーグルトベースの見掛け粘度ηapを換算することができる。

さらに、本発明においては、所定温度における発酵不良時の下限粘度を示すタンク内ヨーグルトのモータ負荷を当該レベルに対応する閾値とし、この閾値より当該モータ負荷が小さい場合、警報を出力するようにすることができる。
例えば、所定温度におけるヨーグルトベースのB型粘度計による粘度測定値が所定値未満となる場合のモータ負荷を当該レベルに対応する閾値とする。そして、アジテータのモータ負荷とタンクレベルの直線性を利用し、あるタンクレベルにおけるモータ負荷の閾値を決定し、この閾値より当該モータ負荷が小さい場合に警報を出力する。このような手段を講じると、貯蔵中のタンク内ヨーグルトの品質不良に対して迅速に対応することができる。

【発明の実施の形態】
以下、本発明の粘度測定方法を具体的に適用する実施形態について詳述する。
1.アジテータのモータ負荷とタンクレベルに関するテスト
[原理]
モータ負荷装置モニタ(株式会社エルファイ製G3型ロードセンサG3−VFD)を、モータケーブルを介して前発酵ヨーグルト用エージングタンクアジテータ(出力3.7kW、定格17.3A:以下、アジテータと略記)に接続し、モータの入力電力を測定する。このモニタでは、供給電力変動状態での電力表示が自動的に行われ、交流モータの軸出力電力を常時検出する。ZEROとSPANを設定し、相対負荷がZERO〜SPANの設定値に比例する信号(DC4−20mAの信号)を出力する。

[テスト方法]
1)CIPユニットより、エージングタンク(以下、タンクと略記)に水を供給し、2.5tから2.5t毎に水供給を止め、アジテータを3分間駆動した。この間のモータ負荷を連続測定し、3分後の値を測定値とした。同時にインバータ表示から電流値を読み取った。これを15tまで行った。
2)ヨーグルトベースをタンクから排出し、15tから2.5t毎に、1)と同様にしてアジテータを駆動し、モータ負荷を測定した。各測定直後にB型粘度計でヨーグルトベースの粘度を測定した(回転速度=60rpm)。製品の品質を考慮し、この粘度が1600mPa・s未満になった場合にテストを中止することとした。
レベル12.5tで粘度が1600mPa・sを下回ったので、テストを中断した。翌日(8.8t越し)増粘したので7.5tから再開した。レベルが8.8tのデータは記録計の読みと工程検査記録による。

[結果]
所定タンクレベルにおける水及びヨーグルトベースについてのモータ負荷、電流、ヨーグルトベースの粘度及び温度の測定結果を下表1に示す。

上記測定結果より、ヨーグルトベースのレベル(タンクレベル)とモータ負荷との関係を図1に示した。粘度が1590〜1810mPa・sとやや幅があるが、モータ負荷は、タンクレベルに対して直線性を示した。従って、これらデータを製造規格値と比較して発酵不良時の粘度下限の閾値として使用し、オペレータに警報を知らせることにより、エージング中の品質不良に対し、迅速に対応することができる。

2.モータ負荷とタンク内ヨーグルトの見掛け粘度との関係
ここで、アジテータ径D=2.33[m]、アジテータ先端部とタンク内壁間の距離L=0.085[m]とすると、アジテータ先端部での剪断速度γ[s−1]は、上記式(3)から、γ≒30.14[s−1]となる。この時の見掛け粘度ηap[Pa・s]は、上記式(4)より、ηap=η0γn−1≒7.33×102[Pa・s]となる。但し、指数法則の係数η0及び指数nは、剪断速度γの値を変えて粘度ηを測定し、得られた複数の測定値に基づいて決定した。

上式(5)から、撹拌レイノルズ数ReMは、ρ=1072[kg・m−3]より、ReM≒2.78となる。すなわち、アジテータ近傍ではヨーグルトベースは完全な層流になっている。
従って、上式(7)を用い、アジテータの動力数NPに相当するモータ負荷より、ヨーグルトベースの見掛け粘度を換算することができる。さらに、より詳細に指数法則の式(4)を求めれば、厳密に粘度管理が可能になる。

【発明の効果】
以上説明したように、上述の方法によれば、タンク内ヨーグルトをサンプリングすることなく、その粘度をモニタリングすることができる。従って、ヨーグルトのサンプリング工数が減少し、貯蔵中のヨーグルトの物性異常を迅速に知ることができる。また、インライン測定なので、サンプリングによる品質事故の抑制、歩留まりの向上も期待できる。

1. Test on motor load and tank level of agitator [Principle]
