Description

【0001】

TECHNICAL FIELD OF THE INVENTION
The present invention relates to a bread dough fermentation method and a fermentation method, in which bread dough can be kneaded while being heated even at a low temperature in winter, and the bread dough can be efficiently fermented at a predetermined temperature by simple temperature control. Equipment related.
[0002]
[Prior art]
In recent years, a box-type dough fermenter has been developed as a convenient fermenter for easily making homemade bread even at home.
In this bread dough fermenter, a plurality of support plates are provided on the left and right sides of the container having an open front, a tray on which bread dough is placed on a shelf set on the support plate, and further, at the bottom of the container, An electric heater serving as a heat source in the refrigerator is integrally provided.
When the bread dough is fermented, the bread dough fermenter is covered with a transparent cover separately formed and used in combination, so that homemade bread can be easily enjoyed at home.
However, since the above-mentioned dough fermenter is a box type formed by a plurality of plates so as not to be foldable, it is good for a home with a large kitchen, but in a Japanese home with many kitchens with a narrow space. Even though it was compact, it would become somewhat narrower if it was always placed, and it would often be a hindrance to daily cooking tasks.
As a solution to this problem, a simple bread dough fermenter has been known which can be used functionally without using a power supply even in a small kitchen, and can be easily folded and assembled.
As such a known technique, there is Japanese Patent Application Laid-Open No. 2001-346502.
[0003]
[Patent Document]
Japanese Patent Application Laid-Open No. 2001-346502 discloses that, as shown in FIG. 8, a container constituting a dough fermenter 1 'includes a hinge connecting mechanism 5' which bends freely a connecting portion between an upper plate, a lower plate and two side plates. A back plate 8 'provided at the opening on the back side of the container is also connected to the upper plate with a hinge such as a hinge 9' so that it can be opened and closed, and support receiving rods provided in a plurality of stages on the left and right inside the container. A dough fermenter 1 'is formed by combining a shelf plate 15' with 14 ', and a transparent cover 17' which is openable and closable by fasteners 16 'provided on both left and right sides is provided at the front opening of the container. And by fixing the left and right ends to the upper plate and the left and right side plates of the container, when necessary, the container, as well as the back plate, the transparent cover, the shelf plate, etc., can be functionally folded compactly. It is configured.
[0004]
These bread dough fermenters provide some convenience, but when the temperature is low in winter, the bread dough becomes too hard to knead, so it is desirable to knead the bread dough while heating it on a warm table. Had been rare.
In addition, since the conventional foldable dough fermenter does not include an electric heater serving as a heat source, fermentation of the dough may not be performed properly at low temperatures in winter.
[0005]
[Problems to be solved by the invention]
Therefore, the present invention provides a method of kneading bread dough containing pure wild yeast while heating, even during low temperatures in winter, and efficiently performing bread fermentation at a predetermined temperature by simple temperature control. It is an object of the present invention to provide a bread dough fermentation method and a fermentation device capable of producing a dough.
[0006]
[Means for Solving the Problems]
For this purpose, the dough fermentation method of the present invention comprises the steps of: heating the electric heater of the kneading table / heating plate to maintain the kneading plate / heating plate at about 30 ° C .; and forming a kneading sheet on the upper surface of the kneading plate / heating plate. A step of kneading the dough while heating, placing the dough on the sheet for the kneading stand and the sheet for the kneading stand,
Next, the kneaded bread dough is put into a fermentation bowl, covered with a lid that emits far-infrared rays, and allowed to stand for several hours until the kneaded bread dough expands to a predetermined position on the scale line of the fermentation bowl, thereby performing a primary fermentation. When,
Furthermore, the bottom opening side of a rectangular box-shaped assembling container having a bottom side opening is placed on the upper surface of the kneading plate / heat insulating plate from which the kneading plate sheet has been removed, and the assembled container and the kneading plate / heating plate. A fermentation room is formed by forming a sealed space, and a top plate tray on which bread dough is arranged is placed on a shelf receiver of the assembly container, and the fermentation room is heated to about 30 ° C. by using a heat source of an electric heater of the kneading stand / heating plate. And the primary fermented bread dough is further subjected to secondary fermentation.
Further, the bread dough fermenting device of the present invention has a surface having a releasable property so that the dough does not adhere, a kneading sheet formed of a relatively tough flexible material, and a It consists of a rigid rectangular plate with a built-in electric heater whose temperature is controlled by a thermistor, etc., and a warming plate that also serves as a kneading table with a flat upper surface, and a bowl-shaped transparent plastic or glass container. A fermentation ball having a scale line indicating the degree of fermentation marked on the side wall surface of the plastic or glass container, and a fermentation chamber having a bottom plate formed of the above-mentioned kneading table and heat retaining plate, and a rectangular box-shaped bottom opening. And an assembling container provided with a transparent door which is connected to the front side so as to be openable and closable by a hinge.

Next, the kneaded bread dough is put into a fermentation bowl 4 shown in FIG. 2, covered with a lid 6 that emits far-infrared rays, and allowed to stand for several hours until the kneaded bread dough expands to a predetermined position on a graduation line 5 of the fermentation bowl 4. And ferment it for primary fermentation.
Further, as shown in FIG. 3, after removing the sheet 3 for the kneading table, the assembling container 7 is kneaded with the assembling container 7 with the bottom opening side of the assembling container 7 facing down on the upper surface of the insulating plate 1 also serving as the kneading table. A sealed space is formed by the stand / heater 1 to form a fermentation room.
It should be noted that the kneading table and heat retaining plate 1 may be formed of a material that exhibits far-infrared radiation and a negative ion effect.
Then, the transparent door 8 of the assembling container 7 is opened, the top plate tray 9 in which bread dough is arranged is placed on the shelf receiver 22 of the assembling container 7, the transparent door 8 is closed, and the heat source of the electric heater of the kneading and heat retaining plate 1 is turned on. The fermentation room is maintained at about 30 ° C., and the primary fermented dough is further fermented.
At this time, the fermentation chamber is humidified by spraying into the fermentation chamber so as not to be too dry.
The bread dough is subjected to secondary fermentation in this way, and the secondary fermented bread dough is baked in an oven or the like to produce bread.
