<P>PROBLEM TO BE SOLVED: To provide a method for readily producing a bait, having gel strength not readily causing falling from a fishhook, containing a bait substance which fishes like in large amount and having good fish-collecting force and bait-taking properties, by which good strike and bite and excellent number of fishes hooked up can be obtained. <P>SOLUTION: The bait is composed of a collagen formed by impregnating a mixed solution obtained by mixing 9.5-67.5 wt.% solution of bait substance which fishes like with 32.5-90.5 wt.% liquid-like modified whey protein processed food so as to have 2.9-8.1 wt.% modified whey protein content into a formed product of purified collagen. <P>COPYRIGHT: (C)2004,JPO&NCIPI

【産業上の利用分野】
本発明は、魚の好む摂餌物質を含有し、釣り針に取り付けて使用する釣り餌及びその製造方法に係るもので、より多くの摂餌物質を含有させる事で魚の喰い込みを良くし、かつ釣り針からの脱落等を良好に防止可能な強度を有する釣り餌を得て、釣果を向上させようとするものである。

【従来の技術】
従来、釣り餌として、天然動物やゲル化物等を用いた人工釣り餌等が使用されている。そして、近年様々な人工釣り餌の開発が試みられているが、相変わらず天然動物を用いた釣り餌が優位にある。それは、天然動物は、釣り餌として重要な要素すなわち釣り針から脱落せずかつ摂餌成分を保持する条件を満たすが、人工釣り餌がそうした条件を十分に満たしていない事が要因の一つとして挙げられる。そこで、人工釣り餌を釣り針から脱落させないようにするためには、小麦粉、大麦粉、馬鈴薯、甘藷といった穀物粉及びこれらを原料とした活性グルテン、並びにα澱粉類のほか、寒天、カラギナン、ペクチン、プルラン、アラビアガム、タラガム、卵白、グルコマンナン、アルギン酸といった天然由来の増粘剤・ゲル化剤や、ポリアクリル酸、カルボキシメチルセルロース、ポリビニルアルコール、ポリエチレングリコールといったポリマー等の合成増粘剤等の適度な粘度とゲル強度を有したものを用いたり、繊維質との併用が試みられている。

【発明が解決しようとする課題】
しかしながら、上述の如き従来の人工的に作られたゲル化物は、摂餌物質の含有量を増やせば摂餌性が高まるがゲル化物の強度が低下する。また、ゲル強度を高めるためには摂餌物質の含有量を少なくする必要があり摂餌性が低下する。このように、摂餌物質の含有量とゲル強度とが背反してしまうため、十分な強度と摂餌物質の含有量を満たすゲル化物を形成する事は困難であった。また、ゲル化物に布や不織布、セルロース、合成繊維等を併用すれば、これらの繊維がゲル強度を補うため、摂餌物質の含有量を多くする事が可能であるが、これらの繊維は魚が常食としていないものであるため、違和感を覚え喰い込みが悪いものとなっていた。

一方 動物の真皮にはコラーゲンが含まれており、魚が口に含んでも違和感を持たない。また、適度な強度としなやかさは、釣り針から脱落しにくい等と言った釣り餌としての必要条件を満たしている。更に、コラーゲンは天然素材であるため環境にも負荷が少なく、魚が食べた場合には栄養にもなる。このような天然のコラーゲンをそのまま用いているものとしては、フグ、ハモ、ナマズ等の魚皮が疑似餌として知られており、これらは強度を十分に備えているが、これらのものは、主に魚類の視覚を刺激して喰わせるものである。

更に、魚皮は魚類が好む臭気成分や味覚成分といった摂餌物質が少なく、魚の嗜好性に合致させる事は難しいものであった。また、魚皮を魚油等の摂餌物質に浸漬しても、摂餌物質を吸収しにくく表面に付着するのみで、水中への投下により摂餌物質がすぐに失われる可能性があり、摂餌性の持続は困難であった。

そこで、本発明者は、精製して不純物を除いたコラーゲンに着目し、このコラーゲンに摂餌物質を含浸させる試みを行った。まず、最初に天然のコラーゲンから精製コラーゲンを作成する際に、予め摂餌物質を混合しておいてから作成するという事を試みたが、摂餌物質に含まれるアミノ酸等がコラーゲンの精製を阻害するため、種類や濃度を替えての実験も繰り返してはみたものの、何れの条件においても純度の高いコラーゲンを得る事が出来ず、そのためゲル化物の強度が弱くなり、釣り餌には不向きであった。

次に、精製したコラーゲンをスポンジ状又はシート状のコラーゲンの成形体に成形したものを用いた。このスポンジ状のコラーゲンの成形体は、コラーゲン溶液或いは分散液を凍結乾燥する事により成形する事ができる。また、シート状のコラーゲンの成形体は、コラーゲン溶液或いは分散液を風乾するか又はスポンジ状コラーゲンの成形体を圧縮して成形する事ができる。これらシート状又はスポンジ状のコラーゲンの成形体に、摂餌物質を含浸させる方法を試みた。この方法で得たコラーゲンゲルは、釣り餌としては十分なゲル強度を得る事ができたが、水中に投じるとコラーゲンゲル内からすぐに摂餌物質が流出してしまい、摂餌性が持続しなかった。

また、澱粉や寒天等のゲル化物に摂餌物質を混合し、コラーゲンの成形体に含浸させてから澱粉や寒天等を加熱溶融させてゲル化し、摂餌物質をコラーゲンゲル内に留めようと試みたが、加熱によりコラーゲンゲルのゲル強度が劣化し、釣り餌としての使用には適さなかった。

本発明は上述の如き課題を解決しようとするものであって、コラーゲンに摂餌物質を含有させて摂餌性を高め、かつコラーゲンゲルへの摂餌物質の保持性を高めて水中での摂餌物質の急激な流出を抑制し、摂餌物質による魚の摂餌性を持続可能な釣り餌を得ようとするものである。更に、このように摂餌物質を含有させても、釣り針からの脱落を良好に防止しかつ魚が喰えた際に良好な食感を与える事が可能なゲル強度を持つ釣り餌を得る。その結果、釣り餌への魚の喰いつきを良くし、釣果を向上させる事を目的とするものである。

【課題を解決するための手段】
本発明は、上述の如き課題を解決するため、第1の発明の釣り餌は、精製したコラーゲンの成形体に、魚の好む摂餌物質の溶解液9.5〜67.5重量%と、液状改質乳清タンパク質加工品32.5〜90.5重量%とを混合して改質乳清タンパク質含有量を2.9〜8.1重量%とした混合液を含浸させて形成したコラーゲンゲルから成るものである。

また、精製したコラーゲンの成形体は、スポンジ状、シート状、綿状、糸状、棒状、ペレット状、ビーズ状、又は不織布状とし、このコラーゲンの成形体を魚の好む所望の大きさ及び形状に成形しても良い。

【作用】
本発明は、上述の如く構成したもので、第1の発明で開示した釣り餌に関する製造方法が第5発明で、魚の好む摂餌物質の溶解液9.5〜67.5重量%と、液状改質乳清タンパク質加工品32.5〜90.5重量%とを混合して混合液を作り、この混合液中の改質乳清タンパク質の含有量を2.9〜8.1重量%とする工程と、この混合液を精製したコラーゲンの成形体に含浸させる工程とから成るものである。この混合液の含浸により、コラーゲンの成形体が膨潤してゲル化し、コラーゲンゲルが形成されるとともに、液状改質乳清タンパク質加工品も自発的にゲルを形成する。また、混合液への含浸処理は、常圧下で行っても良いが、減圧下で行う事により、処理時間が短縮されるとともに、コラーゲンゲルへの混合液の浸透性を高める事ができる。そして、ゲル化した改質乳清タンパク質加工品が架橋する事で、摂餌物質がコラーゲンゲル内に保持されて、第1発明の釣り餌が得られるものである。

上記魚の好む摂餌物質の溶解液として、動物性原料、植物性原料等から一種または複数種を任意に選択して用いる事ができる。例えば、動物性原料としては、ウニ類、オキアミ、イクラ、サケ、エビ類、イワシ、カツオ、ニシン、蚕蛹、貝類、畜産物、その他の天然動物の肉片をミンチ状としたり、これらから抽出したエキス等を使用したり、酵素処理を施しても良く、またこれらを乾燥して粉体加工したものを、水等に溶解して使用しても良いし、食品用として出回っているエキスを併用しても良い。また、その他の魚の好む原料としては、各種の酵母類、アミノ酸、塩類等を用いる事ができる。

また、本発明に於いて、コラーゲンの成形体の原料として精製されたコラーゲンを用いる事が必要な理由は、コラーゲンの精製を行わない場合には、魚の好まない匂いが残る事があるからである。また、精製してないコラーゲンでは、含浸させる液状改質乳清タンパク質加工品のゲル化が阻害される可能性があるとともに、コラーゲンの内部に液状改質乳清タンパク質加工品その他の混合液を均一に含浸させる事ができずゲル強度が不十分となったりムラが出る等の問題を生じる虞もあり、原料としての使用には適していないものである。

また、上記精製コラーゲンの原料である天然動物等の組織に含まれるコラーゲンには、不溶性と可溶性の2つがある。そして、不溶性コラーゲンの精製方法は、例えば天然動物等の組織から分離したコラーゲンに、その変性温度を超えないような温度を保ちながら、機械的な粉砕を加える。この粉砕物を水、酸溶液、アルカリ溶液、タンパク変性剤等で洗浄し、不純物を除去する事で精製を行う。この精製の際は、生体内に存在しているコラーゲンの高次構造を残しながら精製する事が望ましい。具体的にはコラーゲンの高次構造を完全に崩すのではなく、最低でもミクロフィブリル構造を残した不溶性コラーゲンとする事で、組織に含まれるコラーゲン以外の不純物を取り除き易くする事ができ、十分な精製を行う事が可能となる。また、生体内の高次構造を残す事によって、精製されたコラーゲンに物理的強度を持たせる事が可能となる。

一方、不溶性コラーゲンを酸、ペプシン等で処理して可溶化したコラーゲン、或いは可溶性コラーゲンでは、完全に溶液状態にする事ができるため、十分な精製が可能となる。その具体的精製方法は、例えばコラーゲンを水溶液として、この溶解液からコラーゲン成分を沈殿析出する工程を繰り返す事で行う。しかし、これら可溶化、或いは可溶性コラーゲンの場合には、精製されたコラーゲンの物理的強度を高めるために、UV、γ線、熱等による物理的分子間架橋や、アルデヒド化合物、イソシアナート化合物、エポキシ化合物等による化学的分子間架橋を導入しても良い。そして、本発明で用いるコラーゲンは、上記不溶性コラーゲンと可溶性コラーゲンの両方を混在させたものであっても良いし、或いはそれらの何れか一方のみであっても良い。

また、本発明で使用する液状改質乳清タンパク質加工品は、例えば特許第3065116号、特公平6−101986号、特許第3053472号公報等に開示されるようなものであり、代表的なものとしては、牛乳ホエイから低分子化合物を実質的に除去し、次いでpHを4以下又は6以上に調整し、その後加熱処理して得られるものである。例えば、チーズ製造時に発生するチーズ乳清を用い、乳清中の低分子化合物を、透析法やクロマトグラフィー等で実質的に除き、pH4以下又は6以上で加熱処理する事により得られる。市販品としては、株式会社第一化成製の「ジェネシス」が有用である。このような改質乳清タンパク質加工品は、澱粉や寒天等の他のタンパク質素材では得られない多くの機能性特性を有している。例えば前記澱粉や寒天等は、ゲル化させるには加熱により熱溶解させる必要があり、この熱溶解時の熱でコラーゲンゲルのゲル強度が劣化する問題があった。しかし、改質乳清タンパク質加工品では、0℃〜室温に静置するだけでゲル化するもので、熱溶解の必要がないため、コラーゲンゲルのゲル強度の劣化を生じる事がないものとなる。

また、改質乳清タンパク質加工品は、塩の存在により、ゲル強度が更に増強されるが、本発明の混合液に含有される摂餌物質は、原料由来の塩分が含有されていたり、抽出エキス等に更に塩分が添加されて出回っているものがある。このような摂餌物質を使用すると、この摂餌物質に含まれる塩分の作用により、改質乳清タンパク質加工品のゲル強度が増強され、その優れた架橋により、コラーゲンゲル内への摂餌物質の保持力が高まるものとなる。従って、改質乳清タンパク質加工品は、摂餌物質の架橋として使用するのに好適なものである。

また、上記コラーゲンの成形体、魚の好む摂餌成分、液状改質乳清タンパク質加工品等は、食品又は食品添加物として認められているので、魚や人体に対して安心して使用する事ができる。また、これらの成分は、魚が食べた際には栄養になるし、水中に放出された場合でもバクテリア等に生分解されるので、水質を汚染するといった心配が少なく、環境にも負荷の少ない使用が可能となる。

また、本発明の釣り餌は、液状改質乳清タンパク質加工品の含有量によって、形成されるコラーゲンゲルの状態が変わる。例えば改質乳清タンパク質の含有量が9重量%の液状改質乳清タンパク質加工品を使用した場合、液状改質乳清タンパク質加工品の含有量が32.5重量%(改質乳清タンパク質含有量は2.9重量%となる)より少ないと、改質乳清タンパク質加工品のゲル化が困難になり、コラーゲンゲルからの摂餌物質の流出速度が早くなる。

逆に、液状改質乳清タンパク質加工品の含有量が90.5重量%(改質乳清タンパク質含有量8.1重量%)より多いと、ゲル強度が高くハリ持ちの良いコラーゲンゲルが得られるものの、摂餌物質の含有量が相対的に少なくなり、集魚力に乏しくなる。そのため、液状改質乳清タンパク質加工品は、32.5〜90.5重量%とする。また、好ましくは、液状改質乳清タンパク質加工品を60〜90.5重量%とし、混合液中の改質乳清タンパク質の含有量が5.4〜8.1重量%となるようにする。

また、摂餌物質は、含有量が9.5重量%より少ないと水中又は魚の口内に放出される臭気成分や味覚成分が不足して集魚力の弱いものとなり、釣果が向上しない。また、摂餌物質が67.5重量%より多いと、液状改質乳清タンパク質加工品の含有量が相対的に少なくなり、ゲル化が生じにくく脆弱な釣り餌となる。従って、摂餌物質は、9.5〜67.5重量%の範囲で混合する。更に好ましくは、摂餌物質を10〜50重量%とする。

そして、上述の如く形成した第1発明の釣り餌は、摂餌物質を多く含有していても、改質乳清タンパク質加工品の架橋によりコラーゲンゲルのゲル強度が劣化する事はなく、ハリ持ちが良く水中での柔軟な動作が可能な適度な強さを有する製品となる。この釣り餌を水中に投入すると、魚の好む摂餌物質の臭気成分や味覚成分が水中に流出するので、良好な集魚力が得られる。また、改質乳清タンパク質加工品の架橋により摂餌物質がコラーゲンゲル内に良好に保持されているので、水中内で摂餌物質が直ちに失われる事がなく、集魚効果を持続させる事ができる。そして、コラーゲンゲルであるので、釣り餌をくわえた際に魚が違和感を覚える事がなく、更に摂餌物質が魚の口内に放出される事による相乗効果が得られるため、魚の喰い込みが良く、釣り餌としての信頼性の高い製品が得られる。

また、第2の発明の釣り餌は、凍結コラーゲンゲルから成り、その製造方法が第6発明で、魚の好む摂餌物質の溶解液9.5〜67.5重量%と、液状改質乳清タンパク質加工品32.5〜90.5重量%とを混合して改質乳清タンパク質含有量を2.9〜8.1重量%とした混合液を作る工程と、この混合液を精製したコラーゲンの成形体に含浸させる工程と、この含浸工程によりゲル化したコラーゲンゲルを凍結させる工程とから成るものである。

上述の如く形成した凍結コラーゲンゲルでは、冷凍室等での長期の保存が可能となる。そして、使用時には、釣り場等で自然解凍する事により、元のゲル化物に戻り、ハリ持ちが良く水中での柔軟な動作が可能な適度なゲル強度と弾力性が復元するとともに、解凍によって摂餌物質が流出する事がなく、水中での良好な集魚力と摂餌性が持続して、優れた釣果を得る事ができる。また、改質乳清タンパク質は、凍結する事により一層強度の増したゲルが得られ、摂餌物質のコラーゲンゲル内への保持性を更に高めて、集魚力や摂餌性を持続させる事ができる。

また、第3の発明の釣り餌は、乾燥コラーゲンゲルから成り、その製造方法が第7発明で、魚の好む摂餌物質の溶解液9.5〜67.5重量%と、液状改質乳清タンパク質加工品32.5〜90.5重量%とを混合して改質乳清タンパク質含有量を2.9〜8.1重量%とした混合液を作る工程と、この混合液を精製したコラーゲンの成形体に含浸させる工程と、この含浸工程によりゲル化したコラーゲンゲルを乾燥させる工程とから成るものである。また、このコラーゲンゲルの乾燥は、天日乾燥、温風乾燥、凍結乾燥等で行う事ができる。

上述の如く形成した乾燥コラーゲンゲルから成る釣り餌では、冷蔵手段や凍結手段等を必要とせず、手軽な保存や販売等が可能となるし、容量や重量を減らして、収納性や釣り場等への携帯性や商品の運搬性等も向上する。そして、使用の際は乾燥コラーゲンゲルを水等に浸漬して膨潤させゲル化物に戻した後、釣り針に取り付けても良いし、乾燥状態で釣り針に取り付け、海や湖、川等の水中に投下する事で膨潤させるものであっても良い。乾燥した釣り餌であっても、水分の吸収により元のゲル化物に復元し、ゲル強度や摂餌性を損なう事が無く、優れた釣果を得る事ができる。
