近年、米国において、とうもろこし、大豆、小麦に続く第4の重要な穀物としてホワイトソルガムが注目されている。
ホワイトソルガムは、表1および表2に示すように、グルテンを含まず、アレルギー体質の人の代替原料として注目されている。また、栄養成分のバランスが良く、必須アミノ酸(乳幼児に不可欠なヒスチジン)を豊富に含んでいる。

しかし、従来、ホワイトソルガムを用いたパフスナック菓子は、市販されていない。

そこで、本発明者は、ホワイトソルガムを膨化したパフスナック菓子を得るために種種研究の結果、ホワイトソルガムの膨化処理前に塩水を添加することにより所定の膨化率に膨化させたパフスナック菓子を得ることができることを知得し、本発明を完成するに至った。

以下、本発明の実施形態を図面に基づいて説明する。
図1は、本発明に係るパフスナック菓子の製造方法を示す工程説明図である。
本実施形態では、パフスナック菓子とし手頃な大きさであるホワイトソルガムの精白粒の5倍に膨化した場合について説明する。膨化率は適宜変えることができるので、本発明ではこれに限定するものではない。
先ず、第一工程では、ホワイトソルガムの精白粒50kgに対し、濃度2.5%の塩水1.25kgを添加する。
