Claims

CLAIMS 1. Automatic machine (10) for the dry removal of the curing lard from hams (H) which comprises at least one flat support and holding surface (20) lying on a substantially inclined plane with respect to the horizontal suitable to come into contact with the rear surface of a ham (H) characterized in that it comprises at least one rotating brush (40) and handling means (50) able to move at least one of the rotating brush (40) and the supporting surface (20) with respect at the other between the support surface (20) and the rotating brush (40), so as to brush at least a portion of the front surface of the ham (H).

2. Machine (10) according to claim 1, in which said handling means (50) comprise first translation means (51) adapted to operate a reciprocal translation between the support surface (20) and the rotating brush (40) along a direction parallel to the support surface (20).

3. Machine according to claim 1, in which said movement means (50) comprise second translation means (52) adapted to perform a reciprocal translation between the support surface (20) and the rotating brush (40) along the direction orthogonal to the support surface (20).

Machine (10) according to claim 1, in which said support surface (20) is placed substantially vertical.

5. Machine (10) according to claim 1, characterized in that it comprises gripping means (30) for at least a portion of the ham (H) placed in correspondence with the supporting surface (20).

6. Machine (10) according to claim 1, characterized by comprising at least one collection tank (60) for the lard removed from the ham (H), capable of being placed at least partially below the support surface (20).

7. Machine (10) according to claim 1, characterized by the fact of comprising means of transport (15) suitable for carrying at least one ham (H) in correspondence with the support surface (20).

8. Machine (10) according to claim 7, wherein said transport means comprise at least one conveyor (15) of said hams (H) in a suspended configuration, comprising at least one motorized flexible member (151), looped and adapted to support the ham in translation (H).

Machine (10) according to claim 1, in which the support plane (20) is able to oscillate with respect to an axis of oscillation substantially parallel to the support plane (20) itself.

10. Method for the dry removal of the curing lard from hams (H) which includes the steps of: - placing the rear surface of a ham (H) in contact with a support and holding surface; - rotate a rotating brush (40) e - reciprocally translating said rotating brush (40) and said supporting surface (20) so that the rotating brush (40) comes into contact with at least a portion of the front surface of the ham (H) equipped with at least one layer of lard.

11. Method according to claim 11, characterized in that it comprises the step of collecting the lard removed from said front surface of the ham (H) and projected by said rotating brush (40) by centrifugal effect into at least one collection tank (60) .
