La presente invenzione riguarda le scaffalature su cui vengono riposti i prosciutti durante la salagione. The present invention relates to the shelves on which hams are stored during salting.

Come è noto, la salagione avviene cospargendo e sfregando le cosce di maiale con sale grosso, e lasciandole poi riposare per un certo tempo in un ambiente refrigerato. As is known, the salting takes place by sprinkling and rubbing the pork legs with coarse salt, and then letting them rest for a certain time in a refrigerated environment.

All’interno di questo ambiente refrigerato, le cosce di maiale vengono riposte su apposite scaffalature al fine di sfruttare al meglio lo spazio disponibile. Inside this refrigerated environment, the pork legs are placed on special shelves in order to make the most of the available space.

Ciascuna scaffalatura comprende generalmente una serie di ripiani orizzontali reciprocamente sovrapposti. Each shelving generally comprises a series of mutually superimposed horizontal shelves.

Detti ripiani orizzontali sono associati ad un’incastellatura di sostegno in acciaio inossidabile, la quale comprende normalmente due montanti verticali che sono posizionati su lati opposti dei ripiani orizzontali. Siccome una coscia di maiale ha un peso massimo di circa 15kg, ne consegue che ogni ripiano orizzontale deve anche essere sufficientemente rigido e robusto da poter supportare un peso complessivo di almeno 90kg. I ripiani orizzontali sono comunemente realizzati in materiale plastico, mediante un procedimento di stampaggio a iniezione o di termoformatura. Horizontal shelves are commonly made of plastic material, by means of an injection molding or thermoforming process.

Questi ripiani orizzontali non sono tuttavia in grado di garantire da soli la necessaria rigidezza e robustezza, a fronte delle dimensioni richieste. However, these horizontal shelves are not able to guarantee by themselves the necessary rigidity and strength, in the face of the required dimensions.

Per questo motivo, ciascun ripiano orizzontale viene generalmente associato e appoggiato sopra un telaio rigido d’acciaio inossidabile, il quale viene a sua volta fissato ai montanti verticali dell’incastellatura di sostegno, in modo da sopportare efficacemente il peso delle cosce di maiale. Per superare questo inconveniente sono stati proposti dei ripiani autoportanti, che vengono direttamente accoppiati ai montanti dell’incastellatura di sostegno e sono in grado di sopportare autonomamente il peso delle cosce di maiale. Attualmente questi ripiani autoportanti comprendono almeno due lastre termoformate aventi praticamente la forma di un vassoio con i bordi ripiegati verso il basso. Queste lastre termoformate vengono accoppiate l’una sull’altra e reciprocamente bloccate mediante punzonatura a caldo, dopo di che i loro bordi perimetrali vengono sigillati con un apposito mastice, in modo da realizzare una sorta di guscio completamente chiuso e privo di fessure. Queste crepe sono particolarmente negative, in quanto al loro interno può penetrare e annidarsi il sale utilizzato durante la salagione dei prosciutti, eventualmente mescolato al sangue ed al siero dalla carne, creando perciò un ambiente idoneo alla proliferazione di microbi e batteri. These cracks are particularly negative, as the salt used during the salting of the hams can penetrate and nestle inside them, possibly mixed with the blood and whey from the meat, thus creating an environment suitable for the proliferation of microbes and bacteria.

Scopo della presente invenzione è quello di risolvere il menzionato inconveniente dei ripiani autoportanti noti, nell’ambito di una soluzione semplice, razionale e dal costo contenuto. In particolare, l’invenzione rende disponibile un ripiano autoportante per il sostegno di prosciutti, il quale comprende un unico corpo monolitico di materiale plastico realizzato per stampaggio ad iniezione. Infatti, il corpo monolitico di cui è formato il ripiano autoportante è intrinsecamente più resistente delle lastre termoformate utilizzate della tecnica nota, soprattutto contro gli sbalzi termici ed i carichi ciclici. Inoltre, il reticolo di nervature conferisce a detto corpo monolitico la necessaria rigidezza e robustezza per sopportare efficacemente il peso delle cosce di maiale. La scaffalatura 1 è preposta a ricevere le cosce di maiale che sono state cosparse di sale durante la fase di salagione. The shelving 1 is designed to receive the pork legs which have been sprinkled with salt during the salting phase.

La scaffalatura 1 comprende un’incastellatura di sostegno 2, cui sono associati una pluralità di ripiani orizzontali 3 reciprocamente sovrapposti. The shelving 1 comprises a support frame 2, to which a plurality of mutually superimposed horizontal shelves 3 are associated.

Self-supporting shelf for supporting hams comprising a monolithic body of plastic material made by injection molding, which comprises an upper part (30) suitable for receiving the hams in support, characterized in that the lower part of the monolithic body comprises a plurality of ribs (32), which are mutually crossed to form a lattice.

2. Shelf according to claim 1, characterized in that said monolithic body is made of a plastic material based on polypropylene.

3. Shelf according to claim 1, characterized in that said monolithic body is made of an ABS-based plastic material.

4. Shelf according to claim 1, characterized in that the upper part (30) of the monolithic body is joined to a descending peripheral edge (31) which surrounds the network of ribs (32).

5. Shelf according to claim 1, characterized in that the upper part (30) of the monolithic body is smooth.

6. Shelf according to claim 1, characterized by the fact that the monolithic body includes at least two lateral recesses (34) suitable for accommodating a respective upright (20) of a support frame (2).

7. Shelf according to claim 1, characterized in that the monolithic body comprises lower recesses suitable for at least partially receiving a protruding support element (21) which is fixed to a respective upright (20) of a support frame (2 ).

Shelving for the storage of hams comprising a support frame (2) equipped with at least two parallel and spaced uprights (20), characterized in that it comprises a series of self-supporting shelves (3) according to any one of the preceding claims, which are superimposed on each other and are individually supported by both said uprights (20) of the support frame (2).

9. Shelving according to claim 8, characterized in that said uprights (20) are made of stainless steel.

10. Shelving according to claim 8, characterized by the fact that said shelves (3) have a larger dimension in plan, and by the fact that said shelves (3) are oriented so that said larger dimension is parallel to the plane in which the uprights lie (20) of the support frame (2).
