La presente invenzione si colloca nell'ambito della gastronomia e riguarda un sistema di cottura o riscaldamento di cibi di piccole dimensioni direttamente in tavola. Il sistema é formato da: The system consists of:
- Un fornello a gel combustibile (bio-etanolo) o a gas (per esterni)(tipo wok). - A fuel gel (bio-ethanol) or gas (outdoor) stove (wok type).
- Un supporto metallico scheletrico (dis.1/A) o in lamiera (dis.1/B). - A skeletal metal support (dis.1 / A) or sheet metal (dis.1 / B).
- Una coppia di piastre di alluminio ricavate dal pieno o presso-fuse a forma pseudo ellittica (dim: 110x192mm dis.2/A) incernierate su un lato retto in modo da permetterne l'apertura senza scomposizione (dis.2/B). Sul lato opposto troviamo il doppio manico con steli sufficientemente lunghi (16/18Cm) per evitare scottature e con impugnatura ergonomica per una facile apertura e rotazione delle piastre. Nella parte alta troviamo una fascia metallica di circa 20mm che oltre ad alloggiare le piastre impedisce al calore di fuoriuscire lateralmente. Nella versione piena il tutto é ricavato mediante taglio laser di lamiera di circa 1 ,5mm di spessore, successivamente calandrata, piegata ed elettro-saldata. La versione scheletrica invece é ricavata mediante elettro-saldatura di componenti metallici di carpenteria. In seguito il supporto subisce un trattamento superficiale di verniciatura o cromatura per renderlo bello alla vista e facilmente pulibile. Per la comprensione dell'invenzione é utile precisare che con il termine "crescentina” o “tigella" viene definito un dischetto di impasto farinaceo lavorato e tirato per raggiungere circa le dimensioni di 8/9cm di diametro e uno spessore di 5/8mm, cotto, farcito a piacere e consumato caldo sul momento. L'utilizzo risulta essere molto semplice: appena le piastre raggiungono la temperatura desiderata ( circa 15min sul fornello a bio-etanolo, 5/7min sul fornello a gas ) si inseriscono 2 dischetti di impasto precedentemente preparati e si chiudono le piastre. La cottura prevede di ruotare le piastre su se stesse almeno una volta in modo da mantenerle alla stessa temperatura. Passati 5 minuti le crescentine saranno lievitate completamente e convinceranno a dorarsi, a questo punto possono già essere mangiate. E' comunque possibile continuare la cottura per 2/3 minuti a seconda del livello desiderato. Sarà il commensale stesso attraverso la regolazione del fornello e del tempo di cottura a modificare il grado di doratura e croccantezza a suo piacimento. A questo punto la crescentina é pronta per essere aperta (come un panino) e farcita a piacimento o per accompagnare al posto del pane umidi, grigliate arrosti....
