Per andare incontro alle sempre più frequenti esigenze nel campo dell'igiene e della pulizia, abbiamo voluto pensare un sistema per far fronte alle problematiche attuali, riguardanti le grattugie professionali che non presentano, a differenza di quelle per uso domestico, un sistema semplice e veloce di smontaggio tramite il quale l'utilizzatore possa pulire, lavare e igienizzare l'interno della grattugia e il componente principale, il rullo grattugia, che à ̈ quello a più stretto contatto con l'alimento. Le grattugie domestiche avendo bisogno di minor potenza (per il loro utilizzo limitato), usano sistemi di accoppiamento rullo grattugia - corpo motore, che permette l'applicazione di sistemi di smontaggio per la pulizia rapidi (Fig. 2 - tavola 2 - pagina 7), non applicabili alle grattugie di uso professionale, dotate di maggiori potenze, dovendo far fronte a utilizzi più intensivi, vincolandone la pulizia approfondita ad una attività straordinaria legata allo smontaggio del rullo grattugia che, ad oggi, può essere effettuato solo da tecnici specializzati, tramite specifiche attrezzature (Fig.3/4/5 - tavole 2/3 - pagine 7/8).
