Il decreto 21.09.2005 del Ministero delle Attività Produttive (Disciplina della produzione e della vendita di taluni prodotti di salumeria) al Capo III - Salame (arti. 16-21) definisce per «salame» "il prodotto di salumeria, costituito da carni ottenute da muscolatura striata appartenente alla carcassa di suino con aggiunta di sale ed eventualmente di carni di altre specie animali, macinate e miscelate con grasso suino in proporzioni variabili ed insaccato in budello naturale o artificiale". La tecnica di produzione del salame, allo stato dell'arte, è nota e consolidata da decenni se non da secoli. L'analisi microbiologica ha avuto lo scopo accertare l'assenza di patogeni e di caratterizzare microbiologicamente il prodotto valutando la microflora batterica. La successiva Tabella 4 riporta i risultati delle analisi microbiologiche. Analisi nutrizionale Nutritional analysis
La composizione dell'alimento è calcolata per 100 grammi di alimenti al netto degli scarti (parti non edibili). La parte edibile di alimento ha preso in considerazione il salume con esclusione del budello. L'umidità del campione è stata determinata mediante metodo ponderale ed espressa in g/100g. Le proteine totali sono state calcolate come azoto totale (N) moltiplicate per il fattore 6,25. Sostanze grasse totali sono state determinate con metodo ponderale ed indicano la somma di trigiiceridi, fosfolipidi, steroli e composti relativi. Espressi in grammi per 100 grammi di alimento. La composizione acidica determinata per via gascromatografica ed espressa sia come percentuale relativa dei singoli acidi grassi che come sommatoria degli acidi grassi saturi, monoinsaturi e poiinsaturi. Colesterolo determinato per via gascromatografica ed espresso in milligrammi su 100 grammi di prodotto. I carboidrati sono determinati per calcolo come differenza a 100 di ceneri proteine, grassi, umidità e con detrazione della frazione fibrosa. I carboidrati singoli o in miscela indicano la composizione dei glucidi solubili quali monosaccaridi (Glucosio, fruttosio) e disaccaridi quali (saccarosio e lattosio). La fibra alimentare rappresenta la somma di cellulosa emicellulosa pectine gomma e lignina ed è stata determinata con metodo enzimatico gravimetrico. I metodi di analisi utilizzati per le determinazioni sopra riportate sono tutti metodi di analisi ufficiali o procedure interne validate e/o accreditate ACCREDIA.
