È stata svolta una serie di test presso uno stabilimento di produzione di Salumi ed insaccati, seguendo l’evoluzione dello sviluppo di Lysteria e Clostridi nel prodotto (salame contadino) in stagionatura contenente la composizione oggetto della presente invenzione, facendo prelievi e test durante il periodo di maturazione a distanza di una settimana l’uno dall’altro, ripetendo poi i test microbiologici dopo 18 mesi dalla data di produzione. Nelle analisi si riscontra che in nessuno dei prodotti sottoposti ad analisi si sia mai rilevata la presenza di entrambi Lysteria e di Botulino, e solo in tracce in un solo caso (per il Campione 2 testato dopo 18 mesi dalla produzione la conta dei Clostridi Solfito Riduttori è risultata < 100: il dato rilevato è in tracce non quantificabili con limite massimo di 10 unità facenti coltura. Il prodotto si deve per legge consumare prima di dodici mesi dalla data di produzione).
