Abstract
This invention relates to mutants of isoamylases in which at least one of the amino acid residues Thr355, Ile367 and Asp507 is substituted with a different amino acid residue: a plasmid vector containing the nucleotide sequence coding for at least one of the said mutants; a strain of Bacillus transformed by the said plasmid vector; preparation of the said mutants by culturing a strain of the converted Bacillus. The mutant isoamylases are stable at high temperatures (50 degree -53 degree C) at pH 5.0-6.5 and retain their specific activity unchanged. These mutants are useful in the food sector in the production of bakery products, in the manufacture of beer and above all in the preparation of syrups of glucose, maltose and other polysacharides starting from starch.
