Dietary food composition in the form of cornflakes having a high food fibre content and reduced calorie content containing in percentages by weight: "108" maize grits (extruded maize flour), 72-88%, sugar (saccharose" 5-12%, glucomannane 2-15%, malt extract 1.5-5.0%, salt (sodium chloride) 1.5-4.0%, in which the glucomannane and the maize grits are dry mixed for 12-15 minutes and made into a paste with a sugar and salt solution having a water content of between 27 and 33%, after which the paste is cooked at a temperature between 70 degree C and 120 degree C, and extruded at 70-80 degree C with subsequent cutting and flaking of the product.
