Abstract

In order to prepare Turkish coffee using automatic or semi-automatic machines, metered quantities of finely- ground Turkish coffee, sugar and water in defined ratios are introduced via a hopper into a small boiler having an open top which heats up, stirs and dispenses the coffee; the mixture is heated while being stirred gently by a stirrer over a first predetermined period of time; the stirring is halted and the temperature is increased in order to heat the mixture up to 90-95 degrees and the heated mixture is then dispensed by means of a solenoid valve.
