Abstract
The process starts with a lactoserum permeate containing lactose in a proportion of 30-70 g/l. The fermenter (4) is equipped with a stirring system (5) and thermostatted between 28 and 45 DEG C. The lactoserum permeate (1), bacteria of the Lactobacillus type with a high rate of acidification, and biofactors (6) are introduced therein. After ultrafiltration (9) of the fermenting must, the retained material is returned to the fermenter (10) and the filtrate (11) is pumped into a system of ion exchange columns (20). Lactic acid is recovered by frontal elution with a solution of a strong inorganic acid. <IMAGE>
