A process of preparing a wort in brewing involves using a grist containing not less than 0À35% by weight, based on the grist, of special malt (defined) and adding not less than 30% by weight of the solids used in the form of adjunct, wherein the special malt is characterized by a permanently soluble nitrogen content which is at least 50% of the total nitrogen content of the malt, an α-amino nitrogen content of at least 16% of the total nitrogen and an acidity higher than ordinary malt, preferably at least 1À2% calculated as lactic acid. The adjunct (at adjuncts) may be added to the grist or to the wort after mashing. In the former case the grist will consist of special malt and adjunct such as raw grain, gelatinized grain and/or under-modified malt, any balance being brewer's malt. Starch degrading enzymes may be included. When adjunct is omitted from the grist, the adjunct added to the wort should be non-nitrogenous, such as cane-sugar, glucose syrup or maize syrup.
