Abstract

Producing citric acid or citrate salts from a carbohydrate-containing raw material. The process comprises purifying the raw material, fermenting an aqueous solution of the raw material, removing cells to obtain a citric acid solution, precipitating proteins at 2-70 degrees C and removing the proteins by filtration, passing the solution through a first anion exchanger Äto remove inorganic anionsÜ, passing the solution through a second anion exchanger so that the second anion exchanger is selectively loaded with citric acid, eluting the second anion exchanger with a hydroxide solution or water to obtain a citrate or citric acid solution, and removing at least some of the water from the solution.
