Liq. lecithin of 10-30 Pas viscosity is prepd. from lecithin mucilage, a byprod. of vegetable oil prodn.. A muacilage of 25-45 acid number is treated with aq. soluble calcium or magnesium salts so that 0.4-0.9% Ca eg. should be reached (based on mucilage wt.).
